Tips for success
For the best flavor, choose a high-quality thick BBQ sauce—one with molasses or brown sugar as a base. The bourbon should be one you'd drink, but avoid barrel-proof varieties that are too strong.
If you prefer a spicier kick, add a pinch of cayenne or a dash of hot sauce to the crockpot before cooking. For a thicker sauce, remove the ribs and simmer the sauce on the stovetop for 10-15 minutes to reduce.
This dish is forgiving: you can add an extra splash of bourbon or a little water if the sauce looks too thick. If you want more peach flavor, add an extra cup of peaches.
The leftovers are even better the next day—the flavors meld and deepen. Serve the ribs with a side of coleslaw or cornbread to round out the meal.
Variations
- Spicy Peach BBQ Ribs: Add 1-2 minced chipotle peppers in adobo sauce to the crockpot along with the BBQ sauce for a smoky heat. Reduce the bourbon to 2 tablespoons to balance the spice.
- Apple-Bourbon Short Ribs: Replace the peaches with 3 cups of sliced apples (such as Honeycrisp or Fuji). The apples will break down similarly, adding a tart-sweet flavor that pairs well with bourbon.
- No-Bourbon Version: Swap the bourbon for 1/4 cup of apple juice or cider. The result is still sweet and fruity, but entirely non-alcoholic. Add a teaspoon of vanilla extract for extra depth.
- Smoky Chipotle-Orange Ribs: Add the zest and juice of one orange to the sauce, along with 1 teaspoon of smoked paprika. Omit the peaches and instead add 1 cup of orange segments. This brightens the dish with citrusy notes.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in an airtight container for up to 4 days. The sauce will thicken as it chills; add a splash of water or broth when reheating.
- Freezer
- Freeze cooked short ribs and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop.
- Reheat
- Reheat in a covered pot over low heat, stirring occasionally, until hot. Alternatively, microwave in 1-minute intervals, stirring between, until heated through.
Store leftover short ribs in an airtight container in the refrigerator for up to 4 days. Keep the sauce and peaches together with the meat to keep it moist. Reheat gently in a covered pot on the stovetop over low heat, or in the microwave in 30-second bursts, until warmed through.
This recipe is perfect for making ahead: prepare the ribs and sauce the night before, then refrigerate the crockpot insert (if safe) or transfer to a covered container. In the morning, place the mixture in the slow cooker and cook on low. You can also cook the ribs a day ahead, then reheat gently before serving.
Serving ideas
Serve the bourbon peach BBQ short ribs over creamy mashed potatoes, soft polenta, or buttered egg noodles to soak up the luscious sauce. A side of roasted vegetables or a crisp green salad balances the richness.
For a true Southern feel, pair with cornbread and a simple coleslaw. The peaches are a delightful surprise—serve them alongside the meat as a sweet-savory condiment.
For a casual gathering, pile the ribs on a platter with extra sauce on the side. Provide plenty of napkins, as this is finger-licking good.
If you're feeling fancy, garnish with fresh thyme or sliced green onions (though the video doesn't show this). The dish pairs beautifully with a cold beer or sweet tea.

Bourbon Peach BBQ Short Ribs: Set-and-Forget Crockpot Dinner

Ingredients
- 3 lb bone-in beef short ribs, English-cut
- 3 cups sliced fresh peaches (about 4 peaches)
- 1/4 cup bourbon
- 2 cups thick Kansas City-style BBQ sauce
Instructions
- Place the beef short ribs in the slow cooker in a single layer, bone side down. Scatter the sliced peaches over the ribs. Pour the bourbon evenly over the peaches and ribs.
- Pour the thick BBQ sauce over the ribs and peaches, using a spatula to spread it evenly so all the meat is coated.
- Cover the slow cooker and cook on low for 8 to 10 hours, until the meat is fork-tender and easily pulls away from the bone. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Let the ribs rest in the sauce for at least 10 minutes before serving. The internal temperature should reach at least 145°F (63°C).
- Using tongs, carefully lift the short ribs out of the slow cooker and place on a serving platter. Spoon some of the peach and sauce mixture over the top.
