Before you start

Before starting, make sure the bananas are ripe and the strawberries are washed and hulled. Grate the dark chocolate and set it aside in a small bowl.

Measure out the frozen blueberries, acai puree, almond milk, and almond butter. Have two glass bowls or cups ready for serving. If you want a thicker consistency, freeze the banana coins for about 30 minutes before blending.

Ingredients at a glance (10)
  • 2 ripe bananas, peeled and sliced into coins
  • 6 red strawberries, hulled
  • 2 oz dark almond coverture chocolate, grated
  • 2 cups frozen wild blueberries
  • 1/2 cup acai puree (unsweetened)
  • 1 cup almond milk
  • 1/4 cup creamy almond butter
  • Whipped cream, for serving
  • Fresh blueberries, for serving
  • Dark chocolate curls, for serving

Instructions

Prepare the fruit and chocolate

  1. Prepare the fruit and chocolate
Peel the bananas and slice them into even coins. Hull the strawberries and cut them into clean halves or quarters, depending on size. Grate the dark almond coverture chocolate on the large holes of a box grater into a small bowl; set aside.
Look for Banana coins are uniform, strawberries are hulled cleanly, and dark chocolate is in fluffy shavings.
Tip Chill the chocolate block before grating for cleaner shavings that don't melt from the heat of your hands.
  2. Add the base ingredients to the blender
Place the frozen wild blueberries, acai puree, banana coins, almond milk, and creamy almond butter into a glass blender pitcher in that order. Lock the lid securely.
Look for The pitcher is filled with purple-blue ingredients and a swirl of almond butter.
Tip Adding the liquid last helps the blender pull everything down evenly; if the mixture is too thick, add a splash more almond milk.

The banana coins are even and the strawberries are cleanly hulled. The dark chocolate is grated into a fluffy pile. The fruit and chocolate are ready to be used in the next phase.

Blend the smoothie base

  1. Blend until thick and creamy
Blend on high for 45 to 60 seconds, stopping once to scrape down the sides with a spatula. Continue blending until the mixture is completely smooth and has a thick, swirling, velvety consistency.
Look for The smoothie is thick, creamy, and royal purple with no visible chunks.
Tip Use a high-powered blender for the smoothest texture; if the blender struggles, add a little more almond milk, 1 tablespoon at a time.

The blender is filled with the purple-blue mixture and the almond butter. After blending, the mixture is thick, smooth, and velvety, with no visible chunks. The color is a deep royal purple.

Assemble and serve

  1. Assemble the bowls
Pour the thick smoothie into two glass bowls or cups. Top each with a generous swirl of whipped cream, a scattering of fresh blueberries, and a shower of the reserved dark chocolate curls.
Look for Each bowl is crowned with creamy white, juicy berries, and dark chocolate shavings.
Tip For a cleaner presentation, drizzle a little almond butter over the whipped cream as well, if desired.

The smoothie is poured into bowls, topped with whipped cream, fresh blueberries, and dark chocolate curls.

The presentation is beautiful and inviting, with contrasting colors and textures. Take a moment to check the color, texture and aroma before you move on to the next step.

Common mistakes

One common mistake is using fresh fruit instead of frozen, which makes the smoothie watery. Another is over-blending, which can warm the mixture and thin it out. Use a high-powered blender and stop as soon as the mixture is smooth.

Also, be sure to scrape down the sides to ensure everything is fully incorporated. Finally, don't skip the chocolate curls — they add a wonderful texture and flavor contrast.

How to tell it’s done

The smoothie is done when it is completely smooth, thick, and has a rich, velvety texture. It should hold its shape when spooned and not be runny. The color should be a deep royal purple.

If it is too thick to blend, add a little more almond milk; if it is too thin, add more frozen fruit and blend again. The toppings should be added just before serving.
