Tips for success
For extra crispiness, brush the potato skins with a little oil before baking. This helps the skins become shatteringly crisp and adds flavor. You can also sprinkle the skins with coarse salt before baking for a savory crust.
If you prefer a spicier kick, add a dash of hot sauce or chopped pickled jalapeños to the beef before topping with cheese.
For a smoky twist, use smoked cheddar in place of regular cheddar. The consommé can be thickened with a little cornstarch if you prefer a thicker sauce.
Variations
- Chicken Birria Potato: Substitute the beef with shredded chicken cooked in birria sauce. Use the same consommé or a chicken-based version. The chicken is lighter but still flavorful and pairs well with the cheese and potato.
- Vegetarian Birria Potato: Replace the beef with seasoned jackfruit or mushrooms cooked in birria-inspired spices. Use vegetable broth for the consommé. The result is a hearty, plant-based version that still delivers on flavor and texture.
- Spicy Chorizo Potato: Swap the birria beef for cooked Mexican chorizo. The chorizo adds a spicy, smoky kick. Omit the consommé or use a light tomato-based sauce. Top with queso fresco instead of cheddar for a different flavor profile.
- Breakfast Potato: Top the baked potato with scrambled eggs, shredded cheddar, and crumbled bacon. Drizzle with a little hot sauce or salsa. This version is perfect for brunch or a hearty breakfast.

When ready to serve, broil for 5–7 minutes until heated through and the cheese is bubbly. The consommé can be made ahead and reheated.
Serving ideas
Serve the birria stuffed potatoes hot, with extra consommé on the side for dipping. A dollop of sour cream and a sprinkle of fresh cilantro add brightness and a cooling contrast to the rich, spicy beef.
This dish pairs well with a simple green salad or pickled onions to cut through the richness.
For a complete meal, serve alongside Mexican rice or refried beans. The potatoes are substantial enough to be a main course on their own.
For a casual gathering, cut the potatoes in half and serve as appetizers. The consommé can be served in small cups for sipping or dipping.

Birria Stuffed Baked Potatoes with Melted Cheddar & Consommé

Ingredients
- 2 large russet potatoes (about 1 lb each)
- 2 tbsp unsalted butter, softened
- 1/2 tsp sea salt, plus more to taste
- 1/4 cup heavy cream
- 250 g cooked shredded birria beef (about 2 cups)
- 1 cup shredded cheddar cheese
- 1 cup shredded Oaxaca cheese or mozzarella
- 1 cup birria consommé, warm
- 1/2 cup sour cream
- 1/4 cup fresh cilantro leaves, chopped
Instructions
- Heat the oven to 425°F (220°C). Scrub the potatoes and prick them with a fork. Bake directly on the oven rack for 60–70 minutes, until the skins are crisp and a knife slides in easily. Let cool for 5 minutes, then slice each potato lengthwise. Use a fork to fluff the interior, keeping the skins intact. Add butter, sea salt, and heavy cream to each potato and mash gently until creamy and well combined.
- Divide the shredded birria beef evenly between the two potato halves, mounding it generously over the mashed potato. Use a fork to press the beef gently into the potato so it stays in place. Let it rest for 3 minutes before slicing.
- Sprinkle the shredded cheddar and Oaxaca cheese over the beef, covering the top completely. Press the cheese gently so it adheres to the beef.
- Place the potatoes on a baking sheet and broil on high (about 6 inches from the heat) for 5–7 minutes, until the cheese is melted, bubbly, and blistered in spots. Watch closely to prevent burning.
- Remove the potatoes from the broiler and immediately ladle warm birria consommé over the top, letting it soak into the cheese and beef. Add a dollop of sour cream and a generous sprinkle of cilantro. Serve hot.
