Before you start

Start by gathering all necessary ingredients and equipment. Ensure the ground beef is fully thawed if frozen, as cooking from frozen can lead to uneven browning. Preheat your oven to 375°F (190°C) early so it is at the correct temperature when you finish assembling the layers.

Prepare your garnishes by dicing the tomatoes and chopping the fresh cilantro, setting them aside so they are ready for the final step. Having your workspace clean and organized will make the assembly process much faster and smoother.

Ingredients at a glance (6)
  • 1 1/2 lb ground beef
  • 20 oz red enchilada sauce
  • 8 flour tortillas
  • 3 cups shredded cheddar cheese
  • 1 cup diced tomatoes
  • fresh cilantro, for serving

Instructions

Browning the base

  1. Brown the beef
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until it is fully browned and no pink remains. Ensure the internal temperature reaches at least 160°F (71°C) to ensure safety.
Look for The beef should be browned and crumbly with no visible pink.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Drain excess fat from the skillet if desired for a lighter texture.

The ground beef should be deeply browned with a rich, aromatic scent. There should be no visible pink pieces remaining, and the skillet should have a small amount of rendered fat which adds flavor to the sauce. If the beef is too dry, it will not absorb the enchilada sauce correctly, so ensure it remains juicy but not excessively greasy before moving to the assembly phase.

Layering the components

  1. Assemble the casserole
Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, begin layering by spreading a small amount of enchilada sauce on the bottom. Add a layer of tortillas, followed by a portion of the seasoned ground beef, more sauce, and a generous sprinkle of shredded cheese. Repeat these layers until all ingredients are used, finishing with a final layer of cheese on top.
Look for The layers should be even and the top well-covered with cheese.
Tip Overlap the tortillas slightly to ensure full coverage in the dish.

The assembly should look uniform, with the tortillas completely coated in sauce and beef. The cheese should be distributed evenly across the top layer to ensure a consistent, golden crust.

Check that the edges of the tortillas are tucked in slightly to prevent them from becoming too dry or burnt during the baking process. The dish should feel heavy and well-packed before it enters the hot oven.

Final bake and garnish

  1. Bake and serve
Place the baking dish in the preheated oven and bake for about 20 to 25 minutes, or until the cheese is bubbling and golden brown. Remove from the oven and let it rest for 5 minutes. Top with fresh diced tomatoes and chopped cilantro before serving.
Look for The cheese should be completely melted and bubbling, with a golden brown crust.
Tip Watch the top closely during the last few minutes to prevent the cheese from burning.

The casserole is ready when the cheese is bubbling vigorously and has developed a beautiful golden-brown color. The edges should show the sauce thickening and darkening slightly. Once you remove it from the oven, ensure the center is hot. Adding the fresh tomatoes and cilantro right before serving provides a necessary brightness that balances the richness of the melted cheese and spiced beef.

Common mistakes

A common mistake is overcrowding the baking dish, which can lead to uneven cooking and soggy tortillas. Ensure the tortillas are laid out in a single layer to allow the sauce to penetrate evenly.

Another frequent error is failing to brown the beef sufficiently; if the beef is not fully cooked and browned, it will lack the depth of flavor required to stand up to the sauce. Finally, do not skip the resting period, as cutting into the casserole too early will cause the layers to slide apart.

How to tell it’s done

The casserole is done when the internal temperature of the beef-filled layers reaches at least 160°F (71°C) and the cheese on top is fully melted and golden brown.

You will know it is ready when you see bubbling sauce around the edges of the baking dish and the center feels firm when gently pressed with a spatula. Allowing the dish to rest for 5 minutes after removing it from the oven is crucial, as it allows the layers to set and makes portioning much easier.

  • Ground meat: 160°F (71°C) in the thickest part
