Before you start

Before starting, thaw the snow crab clusters if frozen, and peel and devein the shrimp. Dice the bell peppers and onion, and cut the celery into thin ribbons. Prepare the Cajun butter by melting it with spices if making from scratch.

Have all ingredients measured and ready, as the assembly is quick once the slow cooker is set up. Also, cook the jasmine rice according to package instructions, or start it just before serving so it is hot and fluffy.

Ingredients at a glance (10)
  • 2 lb snow crab clusters, thawed if frozen
  • 2 lb raw jumbo shrimp, peeled and deveined
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 large Vidalia onion, diced
  • 2 stalks celery, cut into ribbons
  • 1 cup Cajun garlic-paprika butter, melted
  • 1/4 cup fresh lemon juice
  • steamed jasmine rice, for serving
  • lemon wedges, for serving

Instructions

Layer and Pour

  1. Layer the Seafood and Vegetables
Place the snow crab clusters in the bottom of a 6-quart slow cooker. Add the jumbo shrimp on top, then scatter the diced red and green bell peppers, Vidalia onion, and celery ribbons evenly over the seafood.
Look for The seafood and vegetables should be evenly distributed in the slow cooker.
Tip If the crab clusters are very large, break them into smaller pieces so they fit comfortably.
  2. Pour the Cajun Butter and Lemon
In a small saucepan, melt the Cajun garlic-paprika butter over low heat until it is fully liquid. Pour the melted butter and the fresh lemon juice evenly over the seafood and vegetables in the slow cooker.
Look for The butter and lemon juice should coat the top of the seafood and vegetables.
Tip Stir the butter mixture well before pouring to ensure the spices are evenly distributed.
  3. Cover and Cook on Low
Cover the slow cooker with the lid. Cook on low for 4 hours, or until the shrimp are opaque and the crab is heated through. Do not lift the lid during the first 3 hours to maintain heat.
Look for The sauce should be bubbling gently around the edges after about 3 hours.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Cooking on low prevents the shrimp from becoming tough and rubbery.

By the end of this phase, the slow cooker should contain a colorful layer of seafood and vegetables, topped with a glossy crimson butter sauce. The ingredients are not yet cooked, but they are arranged and ready for the slow cooker to work its magic.

The butter should be fully melted and evenly distributed, and the lemon juice adds a bright note. This is the 'dump it in' stage, where everything comes together with minimal effort.

Slow Cook and Infuse

  1. Check the Shrimp for Doneness
After 4 hours, carefully remove the lid. Check that the shrimp are pink and opaque throughout, and the crab meat is hot. The internal temperature of the shrimp should read at least 145°F (63°C) on an instant-read thermometer.
Look for The shrimp should be curled and firm to the touch, not translucent.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip If the shrimp are not yet done, return the lid and cook for 15 more minutes, then check again.
  2. Gently Stir the Sauce
Using a slotted spoon, gently stir the seafood and vegetables in the sauce to coat everything evenly. Be careful not to break the crab clusters.
Look for The sauce should be a rich crimson color and coat the seafood and vegetables.
Tip Stirring gently helps distribute the spices without damaging the delicate crab meat.
  3. Let the Flavors Meld
Turn the slow cooker to warm and let the dish sit for 10 minutes. This allows the flavors to meld and the sauce to thicken slightly.
Look for The sauce should be slightly thicker and the aroma of Cajun spices should be strong.
Tip Letting the dish rest on warm helps the crab absorb more of the butter sauce.

After 4 hours on low, the slow cooker should be gently bubbling, and the aroma of Cajun spices and garlic will fill the kitchen. The shrimp should be pink and curled, the crab bright red, and the vegetables softened. The sauce will have deepened in color and flavor, with a silky texture. This is the moment to check for doneness and stir gently to coat everything in the rich butter sauce.

Serve and Savor

  1. Serve Over Rice
Spoon steamed jasmine rice onto serving plates. Using a slotted spoon, lift the crab clusters, shrimp, and vegetables from the slow cooker and place them over the rice. Drizzle with extra sauce from the slow cooker.
Look for The seafood should be glistening with the butter sauce and the rice should be fluffy.
Tip Serve with lemon wedges on the side for squeezing over the top.
  2. Garnish and Enjoy
Place lemon wedges on the side of each plate for squeezing over the seafood. Serve immediately while hot.
Look for The lemon wedges add a bright, fresh contrast to the rich butter sauce.
Tip A squeeze of lemon brightens the flavors and cuts through the richness.

The final phase involves plating the seafood over steamed rice and spooning the sauce over the top. The dish should look vibrant and inviting, with the crab and shrimp glistening and the peppers and onions scattered throughout. The lemon wedges add a fresh, citrusy contrast. The first bite should be rich, buttery, and slightly spicy, with the sweet crab and shrimp shining through. Serve immediately while hot.

Common mistakes

One common mistake is overcooking the shrimp, which makes them tough and rubbery. The slow cooker's low heat is gentle, but the shrimp can still become overdone if left too long. To avoid this, check the shrimp at the 4-hour mark and remove them from the heat if they are opaque.

Another mistake is lifting the lid frequently, which releases heat and extends cooking time. Keep the lid on for the first 3 hours. Also, be gentle when stirring to prevent breaking the crab clusters.

How to tell it’s done

The dish is done when the shrimp are pink and opaque throughout, and the crab meat is heated through. The internal temperature of the shrimp should reach at least 145°F (63°C) on an instant-read thermometer.

The sauce should be bubbling and slightly thickened, and the vegetables tender. The crab clusters should be easy to pull apart, and the meat should be moist and sweet. If the shrimp are still translucent, cover and cook for another 15 minutes, then check again.

  • Shellfish: 145°F (63°C) in the thickest part
