Tips for success
For the most professional look, use an ice cream scoop to portion the dough into equal sizes. This ensures that every cookie bakes at the same rate and results in a uniform appearance.
If the dough feels too soft to handle, refrigerate it for 15-20 minutes before stuffing; this makes the dough much easier to shape and prevents it from sticking to your hands.
When pressing the final Kinder Bueno piece into the top of the hot cookie, do so gently. The cookie is very soft immediately after coming out of the oven. Placing the piece while the surface is still molten allows the chocolate to meld slightly with the cookie, creating a beautiful, cohesive presentation that highlights the gourmet nature of these treats.
Variations
- Dark Chocolate Bueno: Substitute the white chocolate chips with dark chocolate chunks and use dark chocolate-covered wafer bars to create a richer, more intense flavor profile for the cookie base.
- Almond Cream Core: Replace the hazelnut cream with a thick almond butter or almond praline paste for a different nutty flavor profile. Ensure the filling is frozen into discs before use.
Storage and make-ahead
- Fridge
- Keep in an airtight container for up to 5 days. Ensure the container is sealed well to prevent the cookies from drying out or absorbing other odors.
- Freezer
- Freeze the unbaked stuffed dough balls for up to 1 month. Baked cookies can be frozen for up to 2 weeks, but the texture may change upon thawing.
- Reheat
- Warm in a preheated 300°F (150°C) oven for 5 to 7 minutes until the center is soft. Use pasteurised eggs if serving to vulnerable groups.
Store these cookies in an airtight container at room temperature for up to three days. For longer storage, keep them in the refrigerator to maintain the integrity of the hazelnut cream filling.
Because of the cream center, they are best consumed within a few days of baking, as the texture of the wafer can soften over time when exposed to the moisture of the filling.
The dough can be prepared and shaped into balls, then frozen for up to one month. Simply stuff the dough balls with the frozen hazelnut cream discs, place them on a tray to freeze solid, and then transfer them to a freezer-safe bag. When ready to bake, place the frozen dough balls directly onto the baking sheet and add 2-3 minutes to the total baking time.
Serving ideas
These cookies are best served warm, shortly after baking, to enjoy the molten hazelnut cream core. Because of their large size, they make an impressive dessert to serve at parties or gatherings.
Pair them with a glass of cold milk or a cup of coffee to balance the rich sweetness of the white chocolate and hazelnut cream, creating a sophisticated and satisfying dessert experience.
If serving later, you can gently reheat the cookies in an oven or toaster oven for a few minutes to restore the molten texture of the center.
Avoid using a microwave if possible, as it can make the cookies soggy and cause the wafer pieces to lose their characteristic crunch. Place them on a nice platter and serve them warm for the best possible presentation and taste.

Bakery-Style Kinder Bueno Stuffed Cookies

Ingredients
- 1 cup cold European butter
- 1 cup dark brown sugar
- 3/4 cup caster sugar
- 2 cold eggs
- 1 tsp vanilla bean paste
- 2 cups cake flour
- 1 cup bread flour
- 1 tbsp cornstarch
- 1 cup white chocolate chips
- 4 Kinder Bueno wafer bars, chopped
- 8 tbsp hazelnut cream, frozen into discs
- 4 Kinder Bueno pieces for topping
Instructions
- In a large stand mixer bowl, combine the cold European butter, dark brown sugar, and caster sugar. Beat on medium speed until the mixture is smooth and thick. Add the cold eggs and vanilla bean paste, continuing to beat until just combined. Ensure the butter is incorporated without over-aerating the dough to maintain a dense, bakery-style texture.
- Gradually add the cake flour, bread flour, and cornstarch to the butter mixture. Mix on low speed until the flour is almost incorporated. Gently fold in the white chocolate chips and the chopped Kinder Bueno wafer bars using a silicone spatula. Do not overmix the dough once the flour is added to ensure the cookies remain soft and chewy.
- Divide the dough into equal portions. Flatten each portion into a disc, place a frozen disc of hazelnut cream in the center, and seal the dough tightly around it to form a ball. Arrange on a parchment-lined baking sheet. Bake at 390°F (199°C) for 11 minutes until the edges are golden and caramelized. Press a fresh Kinder Bueno piece onto the top of each cookie while hot. To ensure the eggs are fully cooked, bake until the center reaches 160°F (71°C).
