Tips for success
For an even more intense flavor, add a finely minced shallot to the skillet when sautéing the mushrooms. The sweetness of the shallot pairs exceptionally well with the earthy mushrooms and the salty bacon.
If you prefer a bit of heat, a pinch of crushed red pepper flakes in the mushroom mixture can provide a subtle warmth that cuts through the richness without overpowering the other ingredients.
When adding the Swiss cheese, ensure the slices cover the top surface of the meatloaf evenly to create a uniform layer of melted goodness. If you find the glaze is browning too quickly, you can tent the loaf pan loosely with aluminum foil for the first half of the baking time, removing it for the final fifteen minutes to allow the top to brown and the glaze to set properly.
Variations
- Spicy Bacon Meatloaf: Add a tablespoon of chipotle in adobo sauce to the glaze and include diced jalapeños in the mushroom mixture for a smoky, spicy kick that pairs perfectly with the Swiss cheese.
- Herb-Crusted Meatloaf: Mix fresh parsley, chives, and extra thyme directly into the meatloaf base mixture for a brighter, more herbaceous flavor profile that complements the savory bacon and mushrooms.
Storage and make-ahead
- Fridge
- Keep refrigerated in an airtight container for up to 3 days.
- Freezer
- Wrap individual slices tightly in plastic wrap and store in a freezer-safe bag for up to 1 month.
- Reheat
- Reheat slices in the oven at 325°F (165°C) until warmed through, or use a microwave on medium power.
Store any leftover meatloaf in an airtight container to maintain its moisture. It is best to slice the meatloaf after it has cooled completely if you plan to store it, as this makes it easier to portion and reheat later.
Keep the container in the coldest part of your refrigerator, away from the door, to ensure the temperature remains consistent and the quality of the meat stays at its peak for several days.
The meatloaf can be fully assembled and kept in the refrigerator, covered, for up to 24 hours before baking. Simply take it out of the refrigerator about 30 minutes before putting it into the oven to allow the chill to dissipate, which helps the loaf cook more evenly.
You can also prepare the bacon and mushroom filling up to two days in advance, storing it separately in the refrigerator until you are ready to mix it with the meatloaf base.
Serving ideas
Serve the meatloaf warm, accompanied by sides that balance its richness, such as a crisp green salad with a sharp vinaigrette, roasted root vegetables, or creamy mashed potatoes.
The acidity of a fresh salad helps to cut through the savory fat, while the roasted vegetables provide a pleasant texture contrast. A side of steamed asparagus or green beans also works well to add color and freshness to the plate.
Consider serving the meatloaf with a small bowl of extra glaze on the side for those who prefer an added punch of flavor. A crusty loaf of bread or a side of dinner rolls is excellent for soaking up any leftover glaze or juices on the plate. Present the meatloaf on a clean, white serving platter to highlight the golden cheese topping and the vibrant green of the fresh thyme garnish.

Bacon Mushroom Swiss Cheese Meatloaf for a Hearty Dinner

Ingredients
- 2 lb meatloaf base
- 8 oz mushrooms, sliced
- 6 slices bacon, chopped
- 6 oz Swiss cheese, sliced
- 1/2 cup brown glaze
- fresh thyme, for serving
Instructions
- Place the chopped bacon in a cold skillet and turn the heat to medium. Cook until the bacon is crispy and has rendered its fat. Add the sliced mushrooms to the skillet with the bacon and sauté until they are golden brown and all moisture has evaporated. Remove from heat and set aside to cool slightly.
- In a large mixing bowl, combine the meatloaf base with the cooled bacon and mushroom mixture. Gently mix until combined, being careful not to overwork the meat. Shape the mixture into a rectangular loaf and place it into a 9x5 inch loaf pan. Bake in a preheated oven at 375°F (190°C) until the internal temperature reaches 160°F (71°C).
- Once the meatloaf is cooked, remove it from the oven. Arrange the Swiss cheese slices over the top of the loaf. Pour the brown glaze over the cheese and return to the oven for a few minutes until the cheese is melted and bubbling. Garnish with fresh thyme leaves before serving.
