Before you start

Before starting, ensure all chicken pieces are cut to a uniform size to promote even cooking. Have your sweet potato starch measured and ready in a wide, shallow bowl for easy dredging. Prepare a wire rack or a tray lined with paper towels to drain the excess oil from the chicken once it is finished frying.

Clear your workspace and ensure your thermometer is calibrated to accurately monitor the oil temperature, as precise heat management is the most important factor in achieving the desired texture.

Ingredients at a glance (9)
  • 1 lb chicken thigh, cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp rice wine (contains sulphites)
  • 1 tsp five-spice powder
  • 1 tsp minced garlic
  • 120 g coarse sweet potato starch
  • 1 cup fresh Thai basil leaves
  • 4 cups frying oil
  • white pepper salt, to taste

Instructions

Marinating the Chicken

  1. Marinating the Chicken
Combine the bite-sized chicken thigh pieces with soy sauce, rice wine, five-spice powder, and minced garlic in a mixing bowl. Mix thoroughly to ensure every piece is evenly coated. Place the bowl in the refrigerator and allow the chicken to marinate for at least 30 minutes to develop deep flavor profiles before proceeding to the coating step.
Look for The marinade should be fully absorbed into the chicken pieces.
Tip Keep the chicken in the refrigerator throughout the marination process to maintain food safety standards.

The chicken should be thoroughly coated in the marinade mixture. After 30 minutes in the refrigerator, the meat will have absorbed the aromatics, and the texture will be slightly firmer. Ensure the chicken is kept chilled until the moment you are ready to dredge it in the starch.

Coating and Frying

  1. Coating and Frying
Dredge the marinated chicken pieces in the coarse sweet potato starch until thoroughly coated. Heat the frying oil in a deep pot to 375°F (190°C). Carefully drop the chicken into the hot oil and fry for 4 minutes until the crust becomes golden and craggy. Ensure the internal temperature reaches 165°F (74°C) for food safety.
Look for The chicken should be golden brown and look very crunchy.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Fry in small batches to prevent the oil temperature from dropping too drastically during the process.

The chicken pieces must be coated generously with the sweet potato starch. When dropped into the 375°F (190°C) oil, they should immediately begin to bubble and sizzle vigorously. The crust should set quickly, forming the characteristic craggy appearance that defines this style of popcorn chicken.

Flash-Frying and Serving

  1. Flash-Frying Basil and Finishing
Once the chicken is removed, add the fresh Thai basil leaves to the hot oil. Fry for only 5 seconds until they turn translucent and crisp. Remove immediately with a spider strainer. Dust the fried chicken and basil leaves generously with white pepper salt while still hot, then serve using bamboo skewers for an authentic presentation.
Look for The basil leaves should be bright green and shatter-crisp upon touching.
Tip Watch the basil closely as it burns very quickly in hot oil.

The basil leaves will transform almost instantly when they hit the hot oil. Remove them within 5 seconds to prevent them from turning black or bitter. The final dish should be a vibrant mix of golden, crunchy chicken pieces and dark, crispy basil, all dusted with a light coating of white pepper salt.

Common mistakes

A common mistake is overcrowding the fryer, which causes the oil temperature to plummet and leads to greasy, soft chicken. Always fry in batches to maintain high heat.

Another frequent error is using the wrong type of starch; while cornstarch is a common pantry item, it does not provide the same structural crunch as coarse sweet potato starch.

Finally, failing to season the chicken immediately after frying while it is still oily prevents the salt and pepper from adhering properly to the crust.

How to tell it’s done

The chicken is done when the crust has achieved a deep golden-brown color and a rigid, craggy texture. Using a meat thermometer, ensure the internal temperature of the largest piece has reached 165°F (74°C).

The basil leaves should be dark green, translucent, and extremely brittle to the touch. If the chicken is not quite done, continue frying for another 30 seconds, but monitor the color carefully to avoid burning the starch coating.

  • Poultry: 165°F (74°C) in the thickest part
