Tips for success
For the best crust, use a baking steel and preheat it for at least 45 minutes. The steel retains heat better than a stone, giving you that charred, blistered bottom.
If using a stone, place it on the lowest rack to get it as hot as possible. Also, use a pizza peel dusted with cornmeal or flour to slide the pizza off easily—this prevents sticking and keeps the crust intact.
When stretching the dough, use your hands instead of a rolling pin to preserve the air bubbles that create a light, airy crust. Start from the center and work outward, leaving the edges slightly thicker.
If the dough springs back, let it rest for a few minutes before continuing. Do not overwork the dough; a gentle touch yields the best texture.
Variations
- Spicy Clam Apizza: Add a pinch of red pepper flakes along with the garlic for a subtle heat that complements the briny clams. The spice cuts through the richness of the cheese and butter, adding a new dimension.
- Lemon Herb Butter Variation: Replace the oregano with fresh thyme or rosemary for a different herbal note. You can also add a teaspoon of lemon zest to the butter for extra citrus flavor.
- No-Bacon Version: For a lighter topping, omit the bacon and increase the clams to 15. The pizza will still be savory and satisfying, with the clams as the star.
- Gluten-Free Crust: Use a gluten-free pizza dough and bake on a parchment-lined steel to prevent sticking. The cooking time may vary, so check for a crisp, golden crust.
Storage and make-ahead
- Fridge
- Store leftover pizza in an airtight container in the refrigerator for up to 3 days.
- Freezer
- The baked pizza can be frozen for up to 2 months. Wrap individual slices in plastic wrap and then in foil. Reheat from frozen in a 400°F oven for 10-12 minutes.
- Reheat
- To reheat, place slices on a baking sheet in a 400°F oven for 5-7 minutes until the crust is crisp and the cheese is melted.
Leftover pizza can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place the slices on a baking sheet in a 400°F oven for 5-7 minutes, or until the crust is crisp and the cheese is melted.
Avoid microwaving, as it will make the crust soggy. The pizza is best enjoyed fresh, but these leftovers are still delicious.
The pizza dough can be made ahead and kept in the refrigerator for up to 3 days. Bring it to room temperature before stretching.
The clams can be shucked and chopped a few hours ahead, and the bacon can be cooked and crumbled in advance. The lemon herb butter can be melted and kept warm. Assemble the pizza just before baking to keep the crust crisp.
Serving ideas
Serve the white clam apizza hot, straight from the oven, with the lemon wedges on the side for extra brightness. The charred crust and briny clams are best enjoyed immediately, while the cheese is still bubbling and the crust is crackling. Pair it with a crisp green salad or a cold beer for a complete meal.
For a true New Haven experience, cut the pizza into wedges and eat it with your hands. The lemon juice can be squeezed over individual slices to taste. This pizza is substantial enough to be a main course, but it also works well as a shareable appetizer for a crowd. Serve it with extra pecorino for sprinkling, if desired.

Crispy New Haven White Clam Apizza with Charred Crust

Ingredients
- 1 lb pizza dough, at room temperature
- 12 fresh littleneck clams, shucked and chopped
- 4 cloves garlic, thinly sliced
- 1/2 cup grated pecorino cheese
- 4 slices bacon, cooked and crumbled
- 2 tbsp unsalted butter, melted
- 1 lemon, halved
- 2 tbsp fresh oregano leaves
- 2 tbsp olive oil, for the dough
Instructions
- Place a baking steel or pizza stone on the middle oven rack and heat the oven to 525°F (274°C) for at least 45 minutes. On a lightly floured surface, stretch the pizza dough into a 12-inch round, keeping the edges slightly thicker. Transfer the dough to a peel dusted with cornmeal or flour. Brush the dough with olive oil.
- Scatter the chopped clams evenly over the dough, leaving a 1-inch border. Distribute the sliced garlic over the clams. Sprinkle the grated pecorino cheese evenly across the pizza, covering the clams and garlic.
- Sprinkle the crumbled bacon and fresh oregano leaves over the pizza. Drizzle the melted butter over the top, focusing on the areas with the most clams and garlic.
- Slide the pizza onto the preheated baking steel or stone. Bake for 7 minutes, rotating the pizza halfway through, until the crust is charred in spots and the cheese is blistered and golden brown.
- After 7 minutes, check that the bottom of the crust is deeply browned and crisp. The cheese should be melted and blistered, with some charred spots on the crust edges. If the top is browning too quickly but the bottom is not crisp, move the pizza to a lower rack for the last minute.
- Remove the pizza from the oven and transfer to a cutting board. Squeeze the fresh lemon juice over the hot pizza, focusing on the clams and bacon. Let the pizza rest for 2 minutes before slicing.
- Use a sharp pizza cutter or chef's knife to slice the pizza into 8 wedges. Serve immediately while the crust is crackling and the cheese is hot.
