Before you start

Before beginning the cooking process, measure out all ingredients to ensure a smooth workflow. Warm the béchamel sauce in a small saucepan over low heat so it is ready for assembly.

Grate the cheese. Grease a deep baking dish with cooking spray, and preheat the oven to 375°F (190°C) so it is ready for baking.

Ingredients at a glance (5)
  • 1 lb tubular pasta
  • 1 1/2 lbs ground beef
  • 1 tbsp spices
  • 3 cups béchamel sauce
  • 1 cup cheese, grated

Instructions

Prepare the Pasta and Spiced Beef Sauce

  1. Cook the Pasta
Bring a large pot of salted water to a boil. Add the tubular pasta and cook until al dente, then drain and set aside.
Look for The pasta should be tender but still firm to the bite.
Tip Do not overcook the pasta, as it will continue to cook in the oven.
  2. Cook the Spiced Beef
In a large skillet over medium-high heat, cook the ground beef with the spices, breaking it up with a spoon, until it is completely browned and reaches a safe internal temperature of 160°F (71°C).
Look for The beef should be fully browned with no pink remaining.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Drain any excess fat from the skillet to keep the layers clean.

At the end of this phase, the pasta is cooked al dente and the ground beef is fully browned and spiced. The meat sauce should smell deeply aromatic, showing a thick, rich consistency with no excess liquid pooling at the bottom of the skillet. This dryness is key to structural success.

Warm the Béchamel and Assemble

  1. Warm the Béchamel
Gently warm the béchamel sauce in a saucepan over medium-low heat, stirring constantly to ensure it is smooth and velvety.
Look for The sauce should be warm, smooth, and free of lumps.
Tip Keep the heat low to prevent the sauce from scorching at the bottom.
  2. Assemble the Layers
Spread the cooked tubular pasta in an even layer at the bottom of a baking dish. Evenly layer the spiced ground beef over the pasta, then pour the warm béchamel sauce over the beef. Top with the grated cheese.
Look for The layers should be distinct and evenly distributed.
Tip Use a spatula to smooth the béchamel layer to the edges of the dish.

The finished béchamel sauce should be incredibly smooth, glossy, and warm. It will emit a comforting aroma of toasted butter and sweet milk. The layers are assembled in the baking dish, with the pasta at the bottom, followed by the beef, and topped with the béchamel and cheese.

Bake and Rest the Pastitsio

  1. Bake the Pastitsio
Bake in a preheated oven at 375°F (190°C) for 40 to 45 minutes, until the cheesy top is bubbling and a deeply browned crust forms. Let the dish rest for 20 minutes before slicing.
Look for The top should have a beautiful, bubbling golden-brown cheese crust.
Tip Resting is essential to allow the layers to set so they can be sliced cleanly.

After baking, the top of the pastitsio features a beautifully blistered, deep golden-brown cheese crust that crackles slightly when touched. The edges should be bubbling gently.

When viewed from the side of the baking dish, the three layers remain completely distinct and stable, with the creamy béchamel sitting perfectly atop the spiced beef.

Common mistakes

One of the most common mistakes when making pastitsio is slicing the dish immediately after removing it from the oven. Because the creamy layers rely on cooling to set into a stable structure, slicing too early will cause the hot layers to collapse into a messy pile.

Another frequent error is leaving too much liquid in the meat sauce. If the sauce is watery, it will seep down into the pasta layer, making the bottom of the dish soggy.

How to tell it’s done

Pastitsio is perfectly cooked when the top cheese crust is deeply browned and bubbling at the edges, and the center is hot and set. Because this dish contains ground beef, the meat must reach a safe internal temperature of 160°F (71°C) during the initial cooking process.

Additionally, the resting period of 20 minutes is crucial for final doneness, as it allows the layers to solidify into easily sliceable portions.

  • Ground meat: 160°F (71°C) in the thickest part
