Tips for success
To achieve the cleanest possible slices, patience is your best friend. Letting the baked pastitsio rest on the counter for at least thirty to forty-five minutes before cutting allows the layers to set and firm up.
When you are ready to cut, use a very sharp chef's knife and wipe the blade clean with a damp paper towel between each slice. This prevents the creamy béchamel from dragging down into the darker meat and pasta layers below.
When assembling the dish, make sure to press the pasta layer down gently into an even, compact layer before adding the meat sauce. This helps create a solid base that won't shift when the meat and béchamel are added.
If your pre-made béchamel is too thick to spread easily, you can whisk in a splash of warm milk to loosen it up slightly before pouring it over the meat layer.
Variations
- Vegetarian Lentil Pastitsio: Replace the ground beef with brown lentils simmered in a spiced tomato sauce for a hearty, meatless version of this classic Greek casserole.
- Spiced Lamb Pastitsio: Substitute ground lamb for the ground beef to add a richer, more traditional Mediterranean flavor profile to the spiced meat layer.
Storage and make-ahead
- Fridge
- Store leftovers in airtight containers in the refrigerator for up to three to four days, cooling them within two hours of cooking.
- Freezer
- Freeze wrapped individual slices in a freezer-safe bag for up to two months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual slices in the oven at 350°F (175°C) covered with foil for fifteen to twenty minutes, or in the microwave until heated through.
Allow any leftover pastitsio to cool completely at room temperature for no more than two hours before storing. Cut the leftovers into individual portions and place them in airtight containers.
Store the containers in the refrigerator for up to three to four days. For longer storage, wrap individual slices tightly in plastic wrap, then in aluminum foil, and place them in a heavy-duty freezer bag.
Pastitsio is an excellent make-ahead meal. You can assemble the entire dish, cover it tightly, and store it in the refrigerator for up to twenty-four hours before baking. When you are ready to bake, remove the cover, and bake at 350°F (175°C) for about fifty to sixty minutes until the top is golden-brown and the center is hot and bubbling.
Serving ideas
Serve a generous square of this warm pastitsio alongside a crisp, refreshing Greek salad dressed with extra-virgin olive oil, red wine vinegar, and dried oregano.
The acidity and crunch of the cucumbers, tomatoes, and red onions provide a perfect contrast to the rich, creamy, and savory layers of the baked pasta. A side of roasted lemon-herb potatoes can also complement the meal beautifully.
For a lighter accompaniment, consider a simple green salad with a bright lemon vinaigrette or some steamed green beans tossed with garlic and olive oil. The pastitsio itself is incredibly rich and filling, so simple, clean side dishes work best to balance the meal. Serve the dish warm, but not piping hot, to ensure that the flavors can be fully appreciated by your guests.

Authentic Baked Greek Pastitsio with Creamy Béchamel

Ingredients
- 1 lb tubular pasta
- 1.5 lb ground beef
- spices to taste
- 3 cups creamy béchamel sauce, store-bought or made ahead
Instructions
- Cook the tubular pasta in a large pot of salted boiling water until al dente. Drain the pasta using a colander and set it aside to cool slightly before assembling.
- Sauté the ground beef in a large skillet over medium-high heat, breaking it up with a spoon. Cook until the meat is completely browned and has reached a safe internal temperature of 160°F (71°C). Stir in the spices to season the meat, and simmer until the mixture is thick and savory.
- Preheat the oven to 350°F (175°C). Spread the cooked tubular pasta evenly in the bottom of a 9x13-inch baking dish. Layer the spiced ground beef mixture over the pasta, then smooth the creamy béchamel sauce evenly over the top.
- Bake the assembled pastitsio in the preheated oven for 45 to 50 minutes, or until the top is golden-brown and bubbling. Remove from the oven and let it rest for at least 30 minutes before slicing into tall, layered squares.
