Tips for success
For the best texture, choose short ribs that are well marbled with fat and have a good amount of meat on the bone. If the ribs are very thick, they may need the full 10 hours; thinner cuts may be done at 8.
Always let the ribs rest in the pot after cooking—this allows the juices to redistribute, making the meat even more tender. When lifting the ribs, use a wide spatula or tongs to support them, as they can fall apart easily.
To enrich the sauce, skim off the fat after cooking and, if desired, reduce the sauce on the stovetop until it reaches your preferred consistency. The apples are a delicious bonus—they absorb the meaty juices and become a sweet-savory side.
Serve the ribs with mashed potatoes, polenta, or crusty bread to soak up every bit of the sauce. Leftovers can be shredded and used in sandwiches or tacos.
Variations
- Spicy Kick: Add 1-2 minced chipotle peppers in adobo sauce to the BBQ sauce before pouring. This adds a smoky heat that complements the sweetness of the apples and molasses.
- Herb Infusion: Tuck a few sprigs of fresh rosemary and thyme into the slow cooker with the ribs. The herbs infuse the sauce with an earthy aroma that pairs well with the beef.
- Bourbon Glaze: Replace 1/4 cup of the apple cider with bourbon. The alcohol will cook off, leaving a subtle warmth and complexity that enhances the molasses.
- Onion and Garlic: Add a large sliced onion and 4 whole garlic cloves to the bottom of the slow cooker before layering the ribs. The onion melts into the sauce, adding sweetness and body.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Skim the solidified fat before reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over low heat, or in a 300°F (150°C) oven, until heated through. Add a splash of apple cider or water if the sauce is too thick.
Cool leftover ribs and sauce completely, then transfer to an airtight container. Refrigerate for up to 4 days. The fat will solidify on top; scrape it off before reheating.
Reheat gently in a saucepan over low heat, or in the microwave in 30-second increments, adding a splash of apple cider or water if the sauce is too thick.
The ribs can be fully cooked up to 2 days ahead. Cool the pot slightly, then refrigerate the entire insert (if oven-safe) or transfer to a container. Reheat on the stovetop or in a 300°F (150°C) oven until hot. The flavor actually improves after a day in the fridge.
Serving ideas
Serve the ribs as the centerpiece of a hearty dinner. The sweet-tangy sauce pairs beautifully with creamy mashed potatoes, buttered egg noodles, or a simple green salad.
The braised apples are a lovely side on their own, offering a tender, fruit-forward contrast to the rich meat. Provide plenty of crusty bread for sopping up the extra sauce.
For a casual meal, pile the shredded meat onto soft rolls and top with a spoonful of the braised apples and sauce. The ribs also work well over polenta or rice, letting the sauce soak into the grains. Garnish with fresh thyme or parsley if desired, though the dish is delicious on its own.

Apple Cider Molasses Beef Short Ribs: Dump-and-Forget Crockpot Dinner

Ingredients
- 4 lb bone-in English-cut beef short ribs
- 3 Honeycrisp apples, sliced
- 1 cup unfiltered apple cider
- 1 1/2 cups molasses garlic BBQ sauce
Instructions
- Place the beef short ribs in the bottom of a 6-quart slow cooker, arranging them in a single layer as much as possible. Scatter the sliced Honeycrisp apples over the top, then pour the apple cider around the edges of the pot, being careful not to rinse the apples off the meat.
- Drizzle the molasses garlic BBQ sauce in thick ribbons over the ribs and apples, covering as much surface area as possible. Use a spoon to spread the sauce evenly, ensuring the tops of the ribs are coated.
- Cover the slow cooker with the lid and set it to LOW. Cook for 8 to 10 hours, until the meat is fork-tender and nearly falling off the bone. Avoid lifting the lid during the first 6 hours to retain heat and moisture. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the ribs rest in the warm pot for at least 10 minutes. This allows the juices to redistribute, making the meat more tender and easier to handle.
- Using a large spoon, skim off any excess fat from the surface of the sauce. The sauce should be glossy and rich, not greasy. Discard the fat.
- Using a carving fork or tongs, carefully lift each short rib out of the slow cooker, letting any excess sauce drip back into the pot. Place the ribs on a serving platter or individual plates.
- Spoon the braised apple slices and the reduced molasses-garlic sauce over the ribs. The apples should be soft but hold their shape, and the sauce should coat the meat generously.
- Serve the ribs immediately while hot, with the apples and sauce spooned over the top. The meat should be so tender that it falls apart at the touch of a fork.
