Tips for success

For the best texture, use old-fashioned rolled oats and avoid overmixing the custard—just whisk until combined. Press the oats down gently after pouring the liquid so they absorb evenly.

If you prefer a thicker, more cake-like texture, let the assembled dish sit for 15 minutes before baking to give the oats more time to soak. For a deeper caramelized top, sprinkle a little extra brown sugar over the top during the last 5 minutes of baking.

To make this recipe your own, try adding a handful of chopped nuts or dried fruit to the oat layer before pouring the custard. A sprinkle of nutmeg or a pinch of cardamom in the brown sugar topping adds warmth. For a more indulgent version, drizzle a little maple syrup over the top after baking. The recipe is forgiving, so feel free to adjust the sweetness or spice to your taste.

Variations

  • Apple Cinnamon: Fold 1 cup of diced peeled apples into the oats before pouring the custard. Add 1/2 teaspoon of apple pie spice to the brown sugar topping for extra warmth.
  • Pecan Crunch: Sprinkle 1/2 cup of chopped pecans over the brown sugar topping before baking. The nuts toast in the oven and add a satisfying crunch.
  • Berry Bliss: Scatter 1 cup of fresh or frozen blueberries or raspberries over the oats before pouring the custard. Reduce the sugar to 1/4 cup if the berries are sweet.
  • Maple Walnut: Replace 2 tablespoons of the brown sugar with maple syrup and add 1/2 cup of chopped walnuts to the topping. Drizzle a little extra syrup over the top after baking.

Storage and make-ahead

Fridge
Store in an airtight container in the fridge for up to 4 days. The topping may soften, but the oatmeal stays moist and flavorful.
Freezer
Freeze baked and cooled oatmeal in an airtight container for up to 3 months. Thaw overnight in the fridge and reheat in the microwave or oven until warm.
Reheat
Reheat individual portions in the microwave for 1–2 minutes, or in a 350°F (175°C) oven for 10 minutes. Add a splash of milk if the oatmeal seems dry.

Store leftover baked oatmeal in an airtight container in the refrigerator for up to 4 days. The topping will soften slightly, but the oatmeal will still be delicious.

To reheat, spoon a portion into a microwave-safe bowl and heat in 30-second intervals until warm, or reheat in a 350°F (175°C) oven for 10 minutes to re-crisp the top. Leftovers can also be eaten cold, like a breakfast bar.

This baked oatmeal is an excellent make-ahead breakfast. Assemble the dish the night before, cover it with plastic wrap or foil, and refrigerate. In the morning, bake it straight from the fridge, adding 5 to 10 minutes to the baking time.

You can also bake it fully, let it cool, and refrigerate it for up to 4 days. Reheat individual portions in the microwave or oven for a quick breakfast.

Serving ideas

Serve the baked oatmeal warm, straight from the oven, with a spoonful of yogurt or a drizzle of maple syrup on top. It pairs beautifully with fresh fruit, such as sliced bananas, berries, or a handful of chopped apples. A glass of cold milk or a hot cup of coffee completes the meal. For a more substantial breakfast, serve it alongside scrambled eggs or a side of bacon.

The oatmeal is also wonderful at room temperature, making it a great option for a brunch buffet or a make-ahead breakfast for a crowd. Cut it into squares and serve it like a bar, or scoop it into bowls.

Leftovers can be reheated and topped with a splash of milk to restore some creaminess. However you serve it, the combination of soft, custardy oats and crisp, caramelized topping is sure to satisfy.

Frequently asked questions

Can this baked oatmeal be made gluten-free?
Yes, use certified gluten-free old-fashioned rolled oats. Ensure the oats are specifically labeled gluten-free, as oats are often cross-contaminated with wheat during processing. The rest of the ingredients are naturally gluten-free, so the dish will be safe for those avoiding gluten.
Can the baked oatmeal be made without eggs?
Eggs help the custard set and give the oatmeal its structure. To make an egg-free version, replace each egg with 1/4 cup of unsweetened applesauce or a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water). The texture will be softer and less custardy, but still delicious.
Why is the center still wet after baking?
The center may be wet if the oatmeal was underbaked or if the dish was too full. Make sure the oven is fully preheated and bake until the center is set and no longer jiggles. If the top browns too quickly, cover with foil and continue baking until the center is done.
Can this recipe be doubled?
Yes, simply double all ingredients and use a larger baking dish, such as a 10x15-inch or two 9x13-inch dishes. Increase the baking time by 5 to 10 minutes, and check for doneness by inserting a knife in the center—it should come out clean.
How should leftovers be reheated?
Leftovers can be reheated in the microwave for 1–2 minutes, or in a 350°F (175°C) oven for 10 minutes to re-crisp the topping. Add a splash of milk if the oatmeal seems dry. Leftovers can also be enjoyed cold, cut into bars.

Ingredients

  • 3 cups old-fashioned rolled oats
  • 2 cups whole milk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup packed light brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp salt

Instructions

  1. Heat the oven to 350°F (175°C). Spread the old-fashioned rolled oats in an even layer in a 9x13-inch baking dish. There is no need to grease the dish first.
  2. In a medium bowl, whisk together the whole milk, eggs, melted butter, and salt until fully combined and the eggs are completely incorporated.
  3. Pour the milk mixture evenly over the oats in the baking dish, making sure all the oats are covered. Gently shake the dish or press the oats down lightly so they absorb the liquid.
  4. In a small bowl, mix the brown sugar and cinnamon. Sprinkle this mixture evenly over the top of the oatmeal, covering the entire surface.
  5. Place the baking dish in the oven and bake for 35 to 40 minutes, until the oatmeal is set in the center and the top is deep golden brown and slightly crackly. The edges will look caramelized.
  6. Let the baked oatmeal rest for 5 minutes before serving. Scoop warm portions into bowls, making sure to include some of the crisp topping in each serving.
