Tips for success
For the best smoky flavor, char the eggplants directly over a gas flame or on a charcoal grill. If you only have an electric stove, use a kitchen torch or broil them, turning frequently until the skins are blackened.
Letting the charred eggplants steam in a covered bowl makes peeling effortless and helps the flesh stay moist.
When searing the lamb, make sure the pan is hot enough that the butter sizzles immediately. Do not move the cubes too soon; let them develop a crust before stirring.
If you prefer a milder spice, reduce the pul biber to 1/2 teaspoon, or use a combination of sweet paprika and a pinch of cayenne.
Variations
- Beef Ali Nazik: Use beef sirloin or tenderloin cubes instead of lamb. Sear them the same way, but be careful not to overcook; beef tenderloin may need only 4-5 minutes. The rest of the dish remains unchanged.
- Spicy Version: Increase the pul biber to 2 teaspoons for a more pronounced heat, or add a pinch of cayenne pepper. You can also drizzle extra melted butter infused with red pepper flakes over the top before serving.
- Vegetarian Alternative: Replace the lamb with sautéed mushrooms or roasted cauliflower florets. Toss them in butter and pul biber until browned, then spoon over the yogurt-eggplant base. This version is hearty and satisfying without meat.
- Grilled Lamb Chops: Instead of cubes, use small lamb chops. Season with salt and pepper, grill or pan-sear to 145°F (63°C), and serve over the eggplant-yogurt base. The chops add a more elegant presentation.
Storage and make-ahead

- Freezer
- Freeze the yogurt-eggplant base in a freezer-safe container for up to 1 month. Thaw overnight in the refrigerator.

Store leftover Ali Nazik in an airtight container in the refrigerator for up to 3 days. The yogurt base may separate slightly upon standing; stir before reheating. For best results, reheat the lamb separately in a skillet and the eggplant base in the microwave or a saucepan over low heat.
The eggplant-yogurt base can be made up to 1 day ahead and stored in the refrigerator. Bring it to room temperature before serving, or warm it gently.
The lamb is best cooked fresh, but you can season and cut the meat a day ahead. The pul biber butter sauce can also be prepared in advance and reheated.
Serving ideas
Serve Ali Nazik immediately after assembling, while the lamb is still sizzling and the yogurt base is cool. The contrast is part of the experience.
Warm lavash bread is essential for scooping up the creamy eggplant and meat. You can also serve with a simple tomato and cucumber salad on the side.
For a complete meal, consider adding a side of rice pilaf or bulgur. The dish is rich and satisfying, so a light salad with lemon and herbs balances it well. Ali Nazik is traditionally eaten with the hands using bread, but a fork and knife work just as well.

Ali Nazik Kebab: Smoky Eggplant with Sizzling Lamb

Ingredients
- 3 large eggplants
- 1 1/2 cups thick strained yogurt (süzme)
- 3 cloves garlic, minced
- salt to taste
- 400 g (14 oz) tender lamb or beef cubes
- 2 tbsp butter
- 1 tsp Turkish red pepper flakes (pul biber)
- warm lavash bread, for serving
Instructions
- Place the eggplants directly over a gas burner flame or on a grill over medium-high heat. Turn frequently until the skins are completely blackened and blistered and the flesh feels soft, about 10 minutes. Transfer to a bowl, cover with a kitchen towel, and let sit for 5 minutes. Peel off the skins, then finely mash the flesh with a wooden spoon and a pinch of salt.
- In a bowl, combine the warm mashed eggplant with the yogurt and minced garlic. Stir until completely smooth, creamy, and pale ivory. Season with salt to taste. Set aside at room temperature while you cook the lamb.
- Heat a large skillet over high heat. Add the butter and let it melt until foaming. Add the lamb cubes in a single layer, season with salt, and cook without stirring for 2 minutes to get a deep sear. Add the pul biber, then continue to cook, stirring occasionally, until the lamb is browned on all sides and cooked through, about 5 to 7 minutes total. The internal temperature should reach 145°F (63°C). Let rest for 3 minutes off the heat.
- Spread the eggplant-yogurt mixture onto a wide serving plate, creating a smooth bed. Spoon the sizzling lamb and its red butter sauce over the center. Serve immediately with warm lavash bread for scooping.
