Tips for success
For even cooking, choose eggplants that are similar in size and thickness. If your eggplants are very large, you may need to extend the covered roasting time by 5–10 minutes.
The chopstick trick is foolproof, but you can also place a wooden spoon handle on either side of the eggplant for the same effect. Be gentle when stuffing to avoid tearing the delicate slices.
To make the dish ahead, assemble the stuffed eggplants and pour the sauce, then cover and refrigerate for up to 24 hours. When ready to bake, add 10 minutes to the covered roasting time.
Leftovers can be stored in the refrigerator for up to 3 days and reheated gently in the oven or microwave. The flavors deepen overnight, making it even more delicious the next day.
Variations
- Lamb and Mint: Replace the ground beef with ground lamb and swap the parsley for fresh mint. Add a teaspoon of ground coriander to the filling for extra warmth. Serve with a dollop of yogurt.
- Spicy Harissa: Add 1–2 tablespoons of harissa paste to the beef filling for a spicy, smoky kick. Reduce the smoked paprika to 1/2 teaspoon. Garnish with chopped cilantro and a squeeze of lemon.
- Vegetarian: Use a plant-based ground meat substitute or a mixture of cooked lentils and mushrooms. Increase the smoked paprika to 1 1/2 teaspoons and add a splash of balsamic vinegar to the sauce.
- Cheese-Topped: After removing the parchment, sprinkle the dish with 1/2 cup of crumbled feta or shredded mozzarella. Return to the oven for the final 10 minutes until melted and golden.

Store leftover accordion eggplant in an airtight container in the refrigerator for up to 3 days. The eggplant will soften further, but the flavor remains excellent. Reheat in a 350°F (175°C) oven for 10–15 minutes, or in the microwave in 30-second bursts until hot.
The stuffed eggplants can be assembled up to 24 hours ahead and kept covered in the refrigerator.
When ready to cook, pour the sauce over if not already added, then cover with wet parchment and roast as directed, adding 10 minutes to the covered time. The filling can also be made a day ahead and stored separately.
Serving ideas
Serve the accordion eggplant as a main course with crusty bread, rice, or couscous to soak up the savory tomato sauce. A simple green salad with lemon vinaigrette balances the richness. For a heartier meal, pair with roasted potatoes or orzo.
To serve, lift each eggplant with a spatula, keeping the accordion intact, and place on a plate. Spoon the roasted peppers, tomatoes, and pan juices over the top.
Garnish with fresh parsley if desired. This dish is also delicious at room temperature, making it a great option for picnics or buffets.

Accordion Eggplant with Beef Filling

Ingredients
- 4 large eggplants
- 500 g (1 lb) ground beef
- 1 onion, grated
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Black pepper, to taste
- Salt, to taste
- 1/4 cup chopped fresh parsley
- 2 sweet pointed peppers, halved
- 2 ripe tomatoes, cut into wedges
- 1 tbsp tomato paste
- 1 cup warm water
Instructions
- Place one eggplant between two chopsticks on a cutting board. Using a sharp knife, slice crosswise at 1-cm intervals, cutting down until the knife touches the chopsticks so the base remains intact, forming an accordion. Repeat with the remaining eggplants.
- In a large bowl, combine the ground beef, grated onion, minced garlic, cumin, smoked paprika, black pepper, salt, and chopped parsley. Knead with your hands until the mixture is well combined and slightly sticky.
- Gently open each eggplant slice and press a small amount of the beef mixture into each slit, filling them generously but not overstuffing. Place the stuffed eggplants in a baking dish.
- Tuck the halved sweet pointed peppers and tomato wedges around the eggplants in the baking dish, nestling them between the eggplants.
- In a small bowl, whisk the tomato paste into the warm water until smooth. Pour the mixture over and around the eggplants.
- Cover the baking dish with a sheet of wet parchment paper, tucking it around the edges. Roast in a preheated oven at 375°F (190°C) for 45 minutes.
- Remove the parchment paper and continue roasting for 10–15 minutes, until the tops are deeply browned and the sauce is bubbling.
- Let the dish rest for 5 minutes. Use a spatula to lift each accordion eggplant onto a plate, spooning the roasted peppers, tomatoes, and pan juices over the top.
