Tips for success
For the crispiest flatbread, make sure the skillet is hot before pouring the batter. If the pan isn’t hot enough, the batter will absorb oil and become soggy. Use a nonstick skillet or a well-seasoned cast-iron pan.
After cooking, let the flatbread rest for a minute before slicing—this helps the cheese set slightly and makes it easier to cut. Serve with a side of Turkish tea or a simple salad for a complete meal.
This recipe is endlessly customizable. Try adding cooked ground lamb, spinach, or feta cheese to the filling. For a vegetarian version, load up on sautéed mushrooms and peppers.
You can also make smaller flatbreads for appetizers or party bites. The batter keeps well in the refrigerator for up to two days, so you can make fresh flatbreads whenever the craving strikes.
Variations
- Spinach and Feta: Add a handful of fresh spinach leaves and crumbled feta cheese to the filling. Sauté the spinach first to remove excess moisture, then combine with the feta for a savory, tangy twist.
- Lamb and Herb: Cook ground lamb with cumin, coriander, and garlic, then spread it over the flatbread before folding. Add fresh parsley or mint for a fragrant, meaty version.
- Mushroom and Thyme: Sauté sliced mushrooms with garlic and fresh thyme until golden. Use this mixture as the filling, and add a sprinkle of grated Parmesan for extra depth.
- Sweet Version: Skip the cheese and scallions, and spread the cooked flatbread with chocolate hazelnut spread or jam. Fold and cook until crisp, then dust with powdered sugar.
Storage and make-ahead
- Fridge
- Store leftover flatbreads in an airtight container in the refrigerator for up to 3 days. Reheat in a dry skillet or toaster oven to restore crispness.
- Freezer
- Freeze cooked flatbreads in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months. Reheat in a 350°F (175°C) oven for 5-7 minutes.
- Reheat
- Reheat in a dry skillet over medium heat for 1-2 minutes per side, or in a toaster oven until crisp. Avoid microwaving as it makes the crust soggy.

The batter can be made up to 2 days ahead and stored in the refrigerator. Whisk it again before using—it may separate slightly. The cooked flatbreads can also be made ahead and reheated in a skillet or oven. For best results, reheat within 24 hours.
Serving ideas
Serve the flatbreads hot, straight from the skillet, with a side of Turkish tea or ayran. They also pair well with a fresh tomato and cucumber salad, or a dollop of yogurt.
Cut into wedges, they make a great appetizer or snack. The crispy crust and molten cheese are best enjoyed immediately.
For a complete meal, serve the flatbreads with a bowl of lentil soup or a simple green salad. You can also stuff them with extra fillings like grilled vegetables or leftover meats.
They’re versatile enough for breakfast, lunch, or dinner. A sprinkle of sumac or red pepper flakes adds a nice tangy kick.

5-Minute Pourable Gözleme Batter Flatbread

Ingredients
- 2 cups all-purpose flour
- 2 cups lukewarm water
- 1 tsp fine sea salt
- 1 1/2 cups shredded kaşar cheese (or mozzarella)
- 1/2 cup thinly sliced scallions (green parts only)
- 3 tbsp unsalted butter, melted (for brushing)
Instructions
- In a large mixing bowl, combine the all-purpose flour, lukewarm water, and fine sea salt. Whisk vigorously until the mixture is completely smooth and has the consistency of a thin pancake batter. There should be no lumps. The batter should be pourable and spread easily.
- Place a large nonstick skillet or griddle over medium-high heat. Let it heat for a couple of minutes until a drop of water sizzles and evaporates immediately. You want a hot surface to get those golden leopard spots.
- Ladle about 1/2 cup of the batter onto the center of the hot skillet. Immediately tilt the pan in a circular motion to spread the batter into a thin, even round, about 8 inches in diameter. Work quickly so the batter sets evenly.
- Sprinkle a generous handful of shredded kaşar cheese and a scattering of sliced scallions over one half of the cooked flatbread, leaving a small border at the edge. The cheese should be evenly distributed but not overflowing.
- Using a spatula, carefully fold the empty half of the flatbread over the filling to form a half-moon shape. Press down gently with the spatula to seal the edges and help the cheese melt. The crust should crackle slightly as you press.
- Brush the top of the folded flatbread with some of the melted butter. Cook for 1 to 2 minutes until the bottom is deep golden with toasted leopard spots. Flip carefully and brush the other side with butter. Cook for another 1 to 2 minutes until both sides are golden and crispy.
- Transfer the cooked flatbread to a cutting board. Let it rest for a minute, then slice into wedges with a sharp knife. The crust should crunch audibly as you cut. Serve hot, with a glass of Turkish tea if desired.
