Tips for success
For the crispiest gözleme, use a heavy-bottomed non-stick skillet and make sure it's fully preheated before adding the oil. The batter should sizzle immediately when it hits the pan.
If you're making multiple flatbreads, keep the cooked ones warm in a 200°F (93°C) oven on a baking sheet while you cook the rest. This helps maintain their crispness without drying them out.
The batter can be made up to a day ahead and stored in the refrigerator. Just give it a good whisk before using, as the flour will settle.
If the batter has thickened overnight, add a little water to bring it back to the right consistency. For a fun variation, add a pinch of red pepper flakes or a dash of smoked paprika to the batter for a subtle kick.
Variations
- Spinach and Feta: Replace the kaşar with crumbled feta and add a handful of fresh spinach leaves. Sauté the spinach briefly to remove excess moisture before adding to the flatbread.
- Spicy Sucuk: Add thinly sliced sucuk (Turkish sausage) or a spicy salami along with the cheese. Cook the sucuk briefly in the skillet before assembling to render some fat and crisp it up.
- Herb and Garlic: Mix minced garlic and chopped fresh dill into the batter for an aromatic twist. Use a blend of mozzarella and feta, and skip the scallions for a milder flavor.
- Mushroom and Thyme: Sauté sliced mushrooms with a little butter until golden, then use them as the filling along with the cheese and a sprinkle of fresh thyme. This adds an earthy depth to the flatbread.
Storage and make-ahead
- Fridge
- Store leftover gözleme in an airtight container in the refrigerator for up to 3 days. Reheat in a dry skillet over medium heat until crisp.
- Freezer
- Freeze cooked gözleme in a single layer on a baking sheet, then transfer to a freezer-safe bag for up to 2 months.
- Reheat
- Reheat in a dry skillet over medium heat for 2-3 minutes per side until hot and crisp. Avoid the microwave to keep the crust crunchy.
Leftover gözleme can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place in a dry skillet over medium heat for 1-2 minutes per side until hot and crisp again.
Avoid using the microwave, as it will make the flatbread soggy. If the gözleme seems dry when reheating, brush with a little melted butter or water before warming.
The batter can be made up to 24 hours in advance and refrigerated. The filling can also be prepared ahead: shred the cheese, slice the scallions, and chop the parsley, then store them separately in the refrigerator.
When ready to cook, simply whisk the batter, assemble the filling, and cook as directed. This makes it easy to serve fresh gözleme on a busy weeknight.
Serving ideas
Serve the gözleme hot, cut into wedges, with a side of Turkish tea or a simple yogurt-based dip. For a complete meal, pair it with a crisp green salad or a bowl of lentil soup. The crispy, cheesy flatbread is also great for breakfast or brunch, served with a soft-boiled egg and a sprinkle of sumac.
For a fun twist, serve the gözleme as a sandwich by stuffing it with grilled vegetables or roasted meats. It also makes a great appetizer for a party—cut into small triangles and serve with a bowl of olives and pickles. However you serve it, the key is to eat it while it's hot, when the cheese is still stretchy and the crust is at its crispiest.

5-Minute Pourable Batter Gözleme with Melted Cheese

Ingredients
- 2 cups all-purpose flour
- 2 cups lukewarm water
- 1 tsp fine sea salt
- 2 cups shredded kaşar cheese
- 1/2 cup sliced green scallions
- 1/4 cup fresh parsley leaves
- 4 tbsp unsalted butter, melted
- 1 tbsp neutral oil (such as canola or vegetable)
Instructions
- In a large bowl, whisk together the all-purpose flour, lukewarm water, and fine sea salt until completely smooth. The batter should be thin and pourable, similar to a crepe batter. Continue whisking for about 2 minutes to ensure no lumps remain.
- Heat a non-stick skillet over medium-high heat and lightly brush with oil. Pour one ladle of batter into the center, tilting the pan to spread it paper-thin. Cook until bubbles form on the surface and the edges start to lift, about 1-2 minutes. Flip and cook for another 30 seconds.
- Immediately after flipping, sprinkle the shredded kaşar cheese, sliced green scallions, and fresh parsley leaves over one half of the flatbread. Fold the other half over to create a half-moon shape, pressing gently with a spatula.
- Brush the top of the folded gözleme with melted butter. Flip and brush the other side. Cook for 1-2 minutes per side, pressing gently with a spatula, until both sides are deep golden with leopard spots and the cheese is fully melted.
- Transfer the gözleme to a cutting board and let rest for 1 minute. Slice into wedges and serve immediately, while the cheese is still stretchy.
