Before you start

Before starting, ensure the puff pastry is thawed but still cold. If it's too warm, it will be sticky and difficult to handle. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Gather the chocolate hazelnut spread, a pizza wheel or sharp knife, and a pastry brush. Have a small sieve ready for dusting powdered sugar after baking. The entire preparation takes just a few minutes, so have everything within reach.

Ingredients at a glance (3)
  • 1 sheet puff pastry (thawed)
  • 1/2 cup chocolate hazelnut spread
  • 1 tbsp powdered sugar, for dusting

Instructions

Prepare and Fill

  1. Prepare the Pastry
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. On a lightly floured surface, gently roll the thawed puff pastry sheet to smooth out any creases, keeping it about 1/8-inch thick.
Look for The pastry should be smooth and pliable, not cracked.
Tip If the pastry sticks, dust the surface lightly with flour.
  2. Add the Chocolate Filling
Spread the chocolate hazelnut spread evenly down the center of the pastry in a strip about 2 inches wide, leaving a 1-inch border at the top and bottom.
Look for The filling should be thick but spreadable, not runny.
Tip If the spread is too stiff, warm it slightly for easier spreading.

At the end of this phase, you should have a smooth, pliable sheet of puff pastry with a neat strip of chocolate spread running down the center.

The pastry should be cold to the touch, and the spread should be thick and evenly distributed. Check that the edges are clean and the filling is not too close to the top or bottom, leaving room for the braid.

Cut and Braid

  1. Cut the Fringe
Using a pizza wheel or sharp knife, cut diagonal strips along both sides of the pastry, from the edge toward the chocolate filling, about 1 inch apart. Make sure the strips are even for a neat braid.
Look for You should have about 6-8 strips on each side.
Tip Cut cleanly through the pastry to make folding easier.
  2. Braid the Pastry
Starting at one end, fold the top strip over the chocolate at a slight angle, then alternate with the opposite strip, overlapping them to create a braid. Continue until all strips are folded, tucking the ends underneath.
Look for The braid should look tight and even, with the chocolate covered.
Tip Don't stretch the strips too much; let them overlap naturally.

You should have even diagonal strips on both sides, each about 1 inch wide. The braid should be tight and even, with the chocolate completely covered. The ends should be tucked under to seal. The pastry should still be cool and not sticky. If any chocolate is exposed, you can gently press the pastry over it.

Bake and Finish

  1. Bake the Pastries
Transfer the braided pastry to the prepared baking sheet. Bake for 18 minutes, or until the pastry is puffed and golden brown all over, with visible flaky layers.
Look for The pastry should be deep golden and sound crisp when tapped.
Tip Rotate the baking sheet halfway through for even browning.
  2. Dust and Serve
Remove from the oven and let cool for 5 minutes on the baking sheet. Dust generously with powdered sugar, then slice and serve warm so the chocolate is still melted.
Look for The sugar melts slightly on the warm pastry, creating a sweet crust.
Tip Serve immediately for the best texture—the pastry stays crisp for about 30 minutes.

The pastries should be puffed and deeply golden, with crisp, flaky layers that look dry and sound hollow when tapped. The chocolate should be melted and oozing slightly from the seams. After dusting with powdered sugar, the pastries should look glossy and inviting, with a sweet aroma of baked butter and chocolate.

Common mistakes

One common mistake is overfilling the pastry with chocolate spread, which can cause it to leak out during baking and make the pastry soggy. Stick to a moderate layer. Another issue is cutting the strips too narrow or too wide, which makes the braid uneven.

Aim for about 1-inch wide strips. If the pastry sticks to the work surface, use a light dusting of flour. Finally, don't skip the parchment paper—it prevents sticking and makes cleanup easy.

How to tell it’s done

The pastries are done when they are puffed and deep golden brown all over, with visible flaky layers that look dry and crisp. The edges may be slightly darker, which is fine. If you tap the top, it should sound hollow and crisp.

Because there is no raw protein in this recipe, there is no internal temperature to check. Let them cool for a few minutes before serving so the chocolate sets slightly and doesn't burn your mouth.
