Before you start

Before you begin, gather all your ingredients and ensure your workspace is clean. Boil a large pot of water and have your parchment paper ready for the noodles.

Have your ricotta, parmesan, egg, and seasonings pre-mixed in a bowl so you can assemble the rolls quickly once the noodles are drained. Having everything prepped in advance is key to keeping this a 20-minute meal.

Ingredients at a glance (12)
  • 8 lasagna pasta sheets
  • 2 cups whole milk ricotta cheese
  • 1 cup grated parmesan cheese
  • 1 large egg
  • 2 cloves minced garlic
  • 1 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup browned Italian ground beef marinara
  • 1 cup crushed tomato sauce
  • 2 cups shredded whole-milk mozzarella cheese
  • fresh torn sweet basil leaves for serving

Instructions

Boiling the pasta

  1. Prepare the pasta
Bring a large pot of salted water to a boil. Add the lasagna pasta sheets and cook until al dente, ensuring they remain flexible and pliable. Once cooked, drain the noodles carefully and lay them flat on a sheet of parchment paper to prevent sticking while preparing the filling.
Look for noodles are tender but still hold their shape
Tip Adding a drizzle of oil to the water helps prevent the noodles from sticking together after draining.

The noodles should be flexible and pliable enough to roll without cracking. They should feel tender but still have a slight bite. Once they reach this stage, they are ready to be drained and laid out flat to cool slightly, which makes them easier to handle during the assembly process.

Rolling the lasagna

  1. Assemble the roll-ups
In a mixing bowl, combine the ricotta, parmesan, egg, minced garlic, parsley, salt, and pepper. Whisk until smooth. Spread this mixture evenly across each boiled noodle. Spoon a portion of the browned ground beef marinara over the ricotta layer, then roll each noodle into a tight cylinder. Arrange these pinwheels upright in a skillet filled with the crushed tomato sauce.
Look for filling is spread evenly and rolls are tight
Tip Use a spoon to spread the ricotta mixture to the very edges of the pasta for consistent flavor in every bite.

The filling should be well-combined and easy to spread. When rolling the noodles, ensure the cylinders are snug but not squeezed so tightly that the filling spills out. Standing them upright in the skillet creates a beautiful presentation and ensures they stay submerged in the tomato sauce during the simmer.

Simmering to perfection

  1. Simmer and serve
Cover the skillet with a glass lid and place over medium heat. Allow the roll-ups to simmer for 10 minutes, or until the cheese is completely molten and bubbling. Finally, remove the lid, garnish with fresh torn basil, and serve immediately on plates. Ensure the internal temperature of the ground meat reaches 160°F (71°C) to guarantee safety.
Look for cheese is melted and bubbling violently
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Watch the heat closely so the tomato sauce at the bottom does not scorch during the final simmer.

The cheese should look molten, stretchy, and bubbling across the entire surface of the skillet. The aroma will be savory and rich with garlic and basil.

Check that the tomato sauce is simmering steadily around the base of the rolls, and ensure the internal temperature has reached the required safety threshold.

Common mistakes

A common mistake is overcooking the noodles in the initial boiling stage; if they become mushy, they will not hold their shape when rolled.

Another error is using too much sauce in the skillet, which can cause the roll-ups to become soggy rather than holding their form. Finally, avoid rushing the melting process; if the heat is too high, the cheese might burn on the bottom before it is fully melted on top.

How to tell it’s done

The lasagna roll-ups are done when the shredded mozzarella on top is completely melted, soft, and bubbling vigorously. The internal temperature of the filling, specifically the ground meat, must reach at least 160°F (71°C) for food safety.

You can test this using an instant-read thermometer inserted into the center of one of the rolls. The pasta should be tender and the sauce thickened and fragrant.

  • Ground meat: 160°F (71°C) in the thickest part
  • Egg dishes: 160°F (71°C) in the thickest part
