Tips for success
For the most flavorful results, use freshly squeezed orange and lime juice rather than bottled. The bright, natural acidity of fresh citrus really shines through.
If you have time, let the chicken marinate in the slow cooker insert overnight in the refrigerator—this allows the flavors to penetrate the meat even more deeply before cooking.
Don't skip smashing the garlic cloves—this simple step releases their essential oils and gives the dish a robust garlic flavor without any harsh raw bite.
When shredding the chicken, do it right in the slow cooker if you prefer, but transferring to a cutting board makes it easier to control the size of the shreds. Return the chicken to the sauce so it stays moist and flavorful.
Variations
- Spicy Mojo: Add 1-2 minced chipotle peppers in adobo sauce to the slow cooker along with the other ingredients for a smoky, spicy kick. The heat will balance the citrus and garlic beautifully.
- Herb-Infused: Stir in a handful of fresh cilantro or parsley during the last 30 minutes of cooking for a brighter, herbier flavor. You can also add a bay leaf at the start and remove it before serving.
- Orange-Ginger: Add 1 tablespoon of grated fresh ginger and 1 teaspoon of orange zest to the marinade. The ginger adds a warm, aromatic note that complements the citrus.
- Smoky Mojo: Replace the olive oil with 1 tablespoon of smoked paprika and 1 teaspoon of liquid smoke. This gives the chicken a subtle barbecue-like depth without overpowering the mojo flavors.
