Tips for success
For the best texture, use frozen watermelon cubes instead of fresh. Freeze the cubed watermelon on a baking sheet for a few hours before blending.
This eliminates the need for as much ice and results in a thicker, creamier slush. You can also freeze the lychees, but be sure to remove the pits first.
If you prefer a less sweet drink, reduce the amount of lychees or use unsweetened coconut water instead of some of the ice.
The lime juice is essential for balancing the sweetness—add it to taste, starting with 2 tablespoons and adjusting from there. For an adult version, you can add a splash of vodka or rum after blending.
Variations
- Berry Twist: Replace half of the watermelon with frozen strawberries or raspberries for a deeper red color and a tangy berry flavor.
- Coconut Cream: Swap the whipped cream for coconut whipped cream and add 1/4 cup coconut milk to the blender for a tropical flavor.
- Sparkling Cooler: After blending, stir in a splash of sparkling water or club soda to create a fizzy, lighter drink.
- Minty Fresh: Add a handful of fresh mint leaves to the blender along with the fruit for a refreshing herbal note.
Storage and make-ahead
- Fridge
- Store leftover cooler in the refrigerator for up to 2 hours; stir before serving.
- Freezer
- Freeze the blended cooler in an airtight container for up to 1 month. Thaw slightly before serving.
- Reheat
- Not recommended; serve cold.
The cooler is best enjoyed immediately after blending, as the ice will melt and the texture will change. If you must store it, keep it in the refrigerator for up to 2 hours, but expect some separation. Stir before serving.
You can prep the fruit and grate the chocolate up to a day ahead. Store the watermelon cubes and lychees in separate airtight containers in the refrigerator. Keep the chocolate curls in a cool, dry place. Blend the cooler when ready to serve.
Serving ideas
Serve the cooler in chilled crystal glasses to keep it frosty. Top each glass with a generous swirl of whipped cream, a whole lychee, and a sprinkle of rose chocolate curls.
For a special touch, rim the glasses with a little lime juice and sugar before pouring.
This drink is perfect for summer parties, baby showers, or a Mother’s Day brunch.
You can double the recipe to serve a crowd, but blend in batches to avoid overfilling the blender. Offer straws for easy sipping, and serve immediately for the best texture.
