Before you start
Before starting, ensure the vanilla bean cheesecake is fully chilled and set—ideally, it has been in the refrigerator for at least 4 hours or overnight. If using a homemade cheesecake, make sure it has cooled completely and is firm to the touch. Gather all ingredients and equipment.
If the kataifi pastry is frozen, thaw it in the refrigerator overnight or at room temperature for a couple of hours. Measure out the pistachio cream and tahini so they are ready to mix. Have a large skillet and a spatula ready for toasting the pastry.
Ingredients at a glance (6)
- 7 oz shredded kataifi pastry (about 200g)
- 1/4 cup unsalted butter (60g)
- 1 cup pistachio cream (250g)
- 2 tbsp tahini (30g)
- 1 chilled vanilla bean cheesecake (about 700g)
- 1 cup milk chocolate ganache (250g)
Instructions
Toasted Crunch
- Toast the KataifiIn a large skillet over medium heat, melt the butter. Add the shredded kataifi pastry and cook, stirring constantly, until golden and crisp, about 5–7 minutes. Remove from heat and let cool slightly.Look for The kataifi should be evenly golden and smell nutty and buttery.Tip Keep stirring to prevent burning; the pastry browns quickly once it starts.
- Mix the Pistachio LayerIn a medium bowl, combine the toasted kataifi with the pistachio cream and tahini. Stir until the pastry is fully coated and the mixture forms a cohesive, crunchy layer.Look for The mixture should be sticky and hold together when pressed.Tip If the mixture seems too dry, add a little more pistachio cream.
At the end of this phase, the kataifi pastry is golden brown, fragrant with butter, and crisp to the touch. The pistachio cream and tahini have been stirred in, creating a sticky, nutty mixture that holds together when pressed. The kitchen smells of toasted nuts and butter, promising a satisfying crunch in every bite.
Chilled Assembly
- Layer Over CheesecakeSpread the pistachio-kataifi mixture evenly over the top of the chilled vanilla bean cheesecake, pressing gently to adhere. Place the assembled cheesecake in the refrigerator and chill for at least 4 hours, or until firm.Look for The layer should be firmly set and not slide off when the cheesecake is tilted.Tip Chilling thoroughly ensures clean slices later.
The pistachio-kataifi layer is evenly spread over the chilled cheesecake, and the assembled dessert is resting in the refrigerator. After at least 4 hours, the layer is firm and adheres to the cheesecake. When you gently press the top, it feels set and solid, ready for the final ganache pour.
Ganache Finish
- Top with GanacheWarm the milk chocolate ganache slightly until pourable but not hot. Pour it over the chilled cheesecake, allowing it to flow over the edges. Let the ganache set at room temperature for about 10 minutes before slicing.Look for The ganache should be smooth and glossy, coating the top evenly.Tip If the ganache is too thick, add a teaspoon of warm cream to thin it.
The warm ganache has been poured over the chilled cheesecake, creating a smooth, glossy surface that drips elegantly down the sides.
After setting for a few minutes, the ganache is firm but still slightly soft to the touch. The cheesecake looks like a professional patisserie creation, with distinct layers visible from the side.
Common mistakes
One common mistake is over-toasting the kataifi, which can make it bitter and dry. Stir constantly and remove it from the heat as soon as it turns golden. Another issue is spreading the pistachio layer over a cheesecake that isn't fully chilled—this can cause the layer to slide off.
Always use a cold cheesecake and press the mixture gently but firmly. Finally, pouring warm ganache over a cold cheesecake can cause it to seize if the ganache is too hot; let it cool to a pourable, warm (not hot) temperature before using.
How to tell it’s done
The cheesecake is done when the assembled dessert has chilled for at least 4 hours and the ganache has set to a glossy, firm-but-slightly-soft consistency.
When you slice into it, the kataifi layer should be crisp and hold its shape, the cheesecake should be smooth and creamy, and the ganache should be smooth and not runny. If the ganache is too soft, chill the cheesecake for another 30 minutes before serving. The dessert should be served cold, straight from the refrigerator.
