Before you start

Before starting, ensure the kataifi is thawed if frozen, and pit the dates if they are not already pitted. Set up a small skillet for toasting, a bowl for mixing, and a parchment-lined baking sheet for the finished dates.

Chop the dark chocolate and have the pistachio paste and butter at room temperature for easier mixing. Warm the pistachio butter slightly if it is too thick to drizzle. Keep a fork or dipping tool nearby for coating the dates.

Ingredients at a glance (9)
  • 12 jumbo Medjool dates, pitted
  • 1/2 cup kataifi (shredded phyllo), thawed
  • 1 tbsp unsalted butter
  • 1/4 cup smooth pistachio paste
  • 12 whole roasted almonds
  • 8 oz 60% dark chocolate, chopped
  • 2 tbsp pistachio butter (for drizzling)
  • Flaky sea salt, for sprinkling, to taste
  • Dried rose petals, for sprinkling, to taste

Instructions

Make the Filling

  1. Toast the Kataifi
Melt the butter in a small skillet over medium heat. Add the kataifi and cook, stirring constantly, until golden and crisp, about 3 to 4 minutes. Transfer to a bowl and let cool slightly.
Look for The kataifi turns light golden brown and smells nutty and buttery.
Tip Stir often to prevent burning; the shreds can go from golden to dark quickly.
  2. Mix the Pistachio Filling
In a small bowl, combine the toasted kataifi with the pistachio paste. Stir until the paste evenly coats the shreds, forming a clumpy mixture that holds together when pressed.
Look for The mixture is cohesive and slightly sticky, with visible crunchy bits.
Tip If the paste is too thick, warm it briefly in the microwave to loosen it.
  3. Stuff the Dates
Using a small spoon, fill each pitted Medjool date with about 2 teaspoons of the pistachio-kataifi mixture. Press one whole roasted almond into the center of the filling in each date, ensuring the almond is surrounded by the mixture.
Look for Each date is plump and the filling stays inside when gently squeezed.
Tip Use a paring knife to reopen the slit if the date closes up after pitting.

The kataifi should be golden and crisp, filling the kitchen with a buttery, nutty aroma. After mixing with pistachio paste, the mixture should clump together when pressed but still have visible crunchy shreds.

The dates are stuffed and waiting, each one holding a roasted almond in the center. This phase sets the stage for a perfect texture contrast.

Coat and Chill

  1. Melt the Dark Chocolate
Place the chopped dark chocolate in a heatproof bowl. Set over a saucepan of barely simmering water (or microwave in 30-second bursts) and stir until smooth and glossy. Keep the chocolate at about 88°F (31°C) for dipping.
Look for The chocolate is fully melted, smooth, and has a slight sheen.
Tip Avoid overheating; chocolate above 90°F (32°C) may seize or lose its snap.
  2. Dip the Stuffed Dates
Using a fork or dipping tool, lower each stuffed date into the melted chocolate, turning to coat completely. Lift it out, allowing excess chocolate to drip back into the bowl, and place on a parchment-lined baking sheet.
Look for Each date is fully enveloped in a smooth, even chocolate layer.
Tip Work quickly so the chocolate stays fluid; if it thickens, rewarm gently.
  3. Drizzle with Pistachio Butter
Warm the pistachio butter slightly so it is pourable. Using a spoon or a small piping bag, drizzle a thin zigzag of pistachio butter over the chocolate-coated dates.
Look for The green pistachio butter forms a decorative pattern on the dark chocolate.
Tip Keep the drizzle light; too much can overwhelm the date's flavor.
  4. Chill Until Set
Transfer the baking sheet to the refrigerator and chill for 10 minutes, until the chocolate is firm and snaps when touched.
Look for The chocolate is hard, and the dates lift easily from the parchment.
Tip Chilling longer is fine, but 10 minutes is enough for a clean bite.

The melted chocolate is smooth and glossy, and each date is fully coated with a thin, even layer. The pistachio butter drizzle creates a beautiful green pattern against the dark chocolate. The dates are now in the refrigerator, and the chocolate will harden into a crisp shell. The tray should be level so the coating sets evenly.

Finish and Serve

  1. Finish with Salt and Rose Petals
Just before serving, sprinkle a pinch of flaky sea salt and a few dried rose petals over each chocolate-coated date. Press gently so they adhere.
Look for The salt crystals and rose petals create a beautiful, textured finish.
Tip Add these right before serving to keep the petals vibrant and the salt crunchy.

After chilling, the chocolate is firm and the dates lift cleanly from the parchment. The flaky sea salt and rose petals add a final flourish, creating a professional, polished look. The dates are ready to serve, with a satisfying snap as you bite through the chocolate into the soft date and crunchy filling.

Common mistakes

A common mistake is overheating the chocolate, which can cause it to seize and become grainy. Always melt gently and stir often. Another is overfilling the dates, which makes them hard to coat and can cause the filling to leak.

Use the suggested 2 teaspoons per date and press the filling in firmly. Finally, adding the salt and rose petals too early can make them soften or absorb moisture; sprinkle them just before serving for the best texture.

How to tell it’s done

The dates are done when the chocolate coating is fully set and firm to the touch, and the filling is stable inside. The chocolate should snap cleanly when you bite into it, revealing the pistachio-kataifi center.

If you are unsure, chill an extra few minutes; there is no harm in a longer set. The dates can be served immediately after the 10-minute chill or kept in the refrigerator until ready to serve.
