Before you start

Before beginning, ensure all ingredients are measured and ready for use. Soften the cream cheese to room temperature to guarantee a smooth, lump-free filling.

Have your springform pan ready and lined if desired. The workspace should be clean and organized to allow for the quick, rhythmic assembly required for the layering process.

Ingredients at a glance (6)
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup whipped cream
  • 1 1/2 cups kataifi, buttered
  • 1/2 cup pistachio butter
  • 6 oz dark chocolate, chopped

Instructions

Creamy Base Assembly

  1. Prepare the cheesecake filling
In a large mixing bowl or stand mixer, combine the softened cream cheese with the powdered sugar. Whip the mixture until it is smooth and creamy. Gently fold in the whipped cream until the texture is light and airy. Spread the mixture evenly into the base of a springform pan.
Look for The mixture should be silky and smooth with no visible lumps of cream cheese.
Tip Ensure the cream cheese is at room temperature before whipping to prevent lumps.

The filling should be pale, light, and perfectly smooth. When lifted with a spatula, it should hold its shape without drooping. Check for any remaining lumps of cream cheese, as these will affect the final mouthfeel of the dessert. Once the consistency is uniform, it is ready to be transferred into the pan.

Pistachio Kataifi Layering

  1. Layer the pistachio kataifi
Take the buttered kataifi and toss it thoroughly with the pistachio butter until every strand is coated. Spread this mixture evenly over the top of the cheesecake filling. Place the cheesecake in the refrigerator to chill for at least four hours so the layers can set properly.
Look for The kataifi should form a uniform layer over the cheesecake.
Tip If the kataifi is too long, trim it slightly for a better bite-sized experience.

The kataifi should be evenly coated with the pistachio butter, appearing golden and slightly glossy. After spreading it over the cheesecake, it should feel uniform and substantial.

The cheesecake is now ready for the refrigerator. Ensure the surface is level so the ganache will distribute evenly later in the process.

Ganache Application

  1. Apply the ganache finish
Once the cheesecake has chilled for four hours, prepare the ganache by melting the dark chocolate until smooth. Ensure the ganache is warm, around 95°F (35°C), then pour it evenly over the crunchy pistachio kataifi layer. Let the ganache set slightly before slicing and serving.
Look for The ganache should have a glossy, mirror-like finish as it covers the crunchy topping.
Tip Pour slowly to ensure even coverage without disturbing the kataifi layer underneath.

The ganache should be smooth, dark, and pourable. As it hits the cold kataifi, it should start to set almost immediately, creating a beautiful contrast. The final look should be a glossy, dark crown over the golden pistachio layer. Let it rest briefly to ensure the ganache is stable before slicing.

Common mistakes

A common mistake is using cold cream cheese, which results in a lumpy filling. Another error is failing to chill the cheesecake for the full four hours; rushing the setting process will cause the layers to slide when sliced.

Additionally, ensure the ganache is not too hot when pouring, as it might cause the cream cheese layer to soften.

How to tell it’s done

The cheesecake is done when the filling is firm to the touch after chilling. The ganache should be set but still yield slightly when sliced.

No internal temperature tracking is required for this no-bake dessert, as all components are either shelf-stable or pre-cooked, focusing instead on the physical set of the cream and the texture of the chocolate.
