Tips for success
For the most tender chicken, always cook on LOW. The longer, gentler cooking time allows the meat to break down slowly, resulting in a melt-in-your-mouth texture. If you're short on time, HIGH works, but the chicken may be slightly less tender.
Also, cut the chicken into uniform cubes so they cook at the same rate. If you prefer larger chunks, adjust the cooking time accordingly — larger pieces may need an extra 30 minutes.
To achieve a thicker, more caramelized glaze, you can remove the chicken and onions once they're done, then simmer the remaining sauce on the stovetop over medium heat for 5-10 minutes until it reduces and thickens.
Alternatively, leave the slow cooker on HIGH with the lid off for the last 30 minutes of cooking. This evaporates excess liquid and intensifies the flavor. Just keep an eye on it to prevent burning.
Variations
- Spicy Kick: Add 1-2 chopped chipotle peppers in adobo sauce or a teaspoon of crushed red pepper flakes along with the BBQ sauce. The smoky heat cuts through the sweetness and adds a bold layer of flavor.
- Honey Garlic Twist: Replace half of the BBQ sauce with honey and add an extra 2 cloves of minced garlic. The honey caramelizes beautifully and gives the dish a sticky-sweet glaze with a pronounced garlic aroma.
- Pineapple BBQ: Stir in 1 cup of pineapple chunks (drained) with the sauce. The pineapple adds a tropical sweetness and a touch of acidity that balances the smoky hickory. Serve over rice with a sprinkle of green onions.
- Smoky Bourbon: Add 2 tablespoons of bourbon to the sauce mixture. The bourbon adds a deep, oaky sweetness that complements the smoky flavors. Cook as directed — the alcohol will cook off, leaving only the flavor.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium heat, stirring occasionally, until hot. Or microwave in 30-second increments, stirring between, until warmed through.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The chicken will absorb more sauce as it sits, so it may be even more flavorful the next day.
To reheat, place the desired portion in a microwave-safe dish and heat in 30-second intervals, stirring occasionally, until warmed through. Alternatively, reheat in a saucepan over medium heat, adding a splash of water or extra BBQ sauce to loosen the sauce if needed.
This recipe is perfect for meal prep. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.
You may need to add 15-20 minutes to the cooking time if starting from cold. Alternatively, cook the full recipe and portion it into individual containers for easy lunches throughout the week.
Serving ideas
Serve the chicken bites over steamed jasmine rice or white rice to soak up the extra sauce. The sweet, smoky glaze pairs beautifully with the neutral rice. For a complete meal, add a side of roasted vegetables or a simple green salad. The dish also works well in sandwiches or wraps — pile the chicken onto brioche buns with a little coleslaw for a pulled-chicken-style sandwich.
For a low-carb option, serve the chicken over cauliflower rice or alongside sautéed greens. The caramelized onions and rich sauce are satisfying enough that you won't miss the carbs. If you have guests, set out the chicken in a serving dish with a slotted spoon and let everyone help themselves. Garnish with a sprinkle of fresh parsley or chopped green onions for a pop of color, if you like.

Vidalia Onion Hickory BBQ Chicken Bites: 5-Ingredient Crockpot Dinner

Ingredients
- 2 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 2 medium Vidalia onions, thinly sliced
- 4 cloves garlic, minced
- 1 1/2 cups hickory brown sugar BBQ sauce
Instructions
- Place the cubed chicken breast pieces in the bottom of a 6-quart slow cooker in an even layer. Scatter the sliced Vidalia onions over the chicken, then add the minced garlic on top. Pour the hickory BBQ sauce evenly over everything, making sure the chicken and onions are well coated.
- Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is cooked through and tender. The chicken is done when it reaches an internal temperature of 165°F (74°C) on an instant-read thermometer. The sauce will have thickened and the onions will be soft and caramelized.
- Using a slotted spoon, transfer the chicken and onions to a serving dish. Spoon extra sauce over the top. Serve hot over steamed jasmine rice, if desired. The chicken should be glistening with the mahogany BBQ glaze.
