Tips for success
To elevate the presentation, serve the Moqueca in individual ceramic bowls. The vibrant colors of the bell peppers and the coral shrimp make this dish visually stunning. Adding the fresh cilantro right before serving ensures the herb flavor remains bright and aromatic against the rich coconut broth.
If you find the stew is not rich enough for your preference, you can increase the amount of coconut milk or add a splash of coconut cream in the final minutes.
Adjust the seasoning with a pinch of kosher salt to taste, but remember that the dende oil already provides a distinct, savory depth that is characteristic of this classic Brazilian dish.
Variations
- Spicy Moqueca: Add two finely diced habanero or jalapeño peppers to the vegetable layer for a spicy kick. The heat pairs exceptionally well with the cooling coconut milk and the richness of the dende oil.
- Vegetable-Forward Moqueca: Increase the variety of vegetables by adding sliced sweet potatoes or hearts of palm. These ingredients add a lovely texture and absorb the delicious coconut broth during the slow cooking process.
Storage and make-ahead
- Fridge
- Keep in an airtight container for up to 2 days.
- Reheat
- Gently reheat on the stovetop over low heat, stirring occasionally until just warmed through to avoid overcooking the seafood.
Store any leftovers in an airtight container in the refrigerator for up to 2 days. Because seafood is delicate, it is best to consume the stew as soon as possible. Ensure the stew cools to room temperature within 2 hours before placing it in the refrigerator to maintain food safety and quality.
You can prepare the vegetable base and marinate the seafood ahead of time, storing them separately in the refrigerator.
When you are ready to cook, simply layer the prepped ingredients into the Crockpot and start the cycle. This makes the dish perfect for stress-free meal planning while ensuring the seafood remains as fresh as possible.
Serving ideas
Serve the Moqueca piping hot over a generous portion of fluffy white rice. The rice acts as a perfect canvas for the golden coconut broth, soaking up the flavors and balancing the richness of the stew.
Providing a side of toasted cassava farofa adds a necessary crunch that contrasts beautifully with the tender, poached seafood.
For a complete coastal dining experience, offer lime wedges on the side so guests can brighten the stew to their personal preference.
A sprinkle of fresh cilantro provides a burst of color and a fresh, herbal note that cuts through the creamy coconut base, making each bowl feel like a vibrant, authentic meal from the coast of Brazil.

Vibrant Brazilian Crockpot Moqueca: A Seafood Stew

Ingredients
- 1 medium yellow onion, sliced
- 2 whole bell peppers (red and yellow), sliced
- 3 medium plum tomatoes, sliced
- 3 cloves garlic, minced
- 1 can full-fat coconut milk
- 2 tbsp red dende palm oil
- 1 lb firm white fish (halibut), cubed
- 1 lb jumbo shrimp, peeled and deveined
- 2 tbsp fresh lime juice
- 1/2 cup fresh cilantro, for serving
- 2 cups cooked white rice, for serving
- 1/2 cup toasted cassava farofa, for serving
Instructions
- Place the cubed firm white fish and peeled jumbo shrimp into a medium mixing bowl. Toss the seafood gently with the fresh lime juice to coat evenly. Cover the bowl and refrigerate for 15 minutes to allow the flavors to penetrate the proteins while you prepare the remaining ingredients.
- In the insert of your slow cooker, create an even base by layering the sliced yellow onions, bell peppers, and plum tomatoes. Distribute the minced garlic over the vegetables. Pour the full-fat coconut milk and red dende palm oil over the vegetable mixture. Finally, arrange the marinated fish and shrimp in a single layer on top of the vegetables.
- Cover the slow cooker and set it to cook on LOW for 2.5 hours. Once the time is up, confirm the fish is cooked through and flaky, reaching an internal temperature of at least 145°F (63°C). The shrimp should be firm and opaque, also reaching an internal temperature of 145°F (63°C). Serve immediately over a bed of white rice, topped with toasted cassava farofa and a generous handful of fresh cilantro.
