Tips for success
For the best flavor, use high-quality hot-smoked salmon. Look for one that is moist and flaky, not dry. If you have time, let the dip sit in the slow cooker on warm for an extra 15 minutes before serving—this allows the flavors to meld even more. Stir gently before serving to redistribute the melted cheese and salmon.
This dip is endlessly adaptable. Add a pinch of smoked paprika or a dash of hot sauce for a different twist. You can also stir in a tablespoon of chopped chives or shallots for extra savoriness.
If you prefer a thinner dip, stir in a little milk or cream until it reaches your desired consistency. Always serve it warm for the best texture and flavor.
Variations
- Smoked Trout Dip: Replace the hot-smoked salmon with hot-smoked trout for a slightly milder, delicate flavor. The cooking time remains the same, and the dip will be just as creamy and delicious.
- Spicy Smoked Salmon Dip: Add 1 teaspoon of sriracha or a pinch of cayenne pepper along with the black pepper. This gives the dip a gentle heat that balances the richness of the cheese and smoked salmon.
- Herb Garden Dip: Swap some of the dill for fresh chives and parsley. Use 2 tablespoons each of chopped chives and parsley, and reduce the dill to 2 tablespoons. This adds a fresh, oniony note to the dip.
- Lemon-Dill Salmon Dip: Increase the lemon zest to 2 tablespoons and add 1 tablespoon of fresh lemon juice along with the other ingredients. This brightens the dip even more and gives it a pronounced citrus flavor.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Let cool completely before refrigerating.
- Freezer
- This dip can be frozen for up to 2 months. Place in a freezer-safe container, leaving some headroom. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over low heat, stirring often, or in the microwave in 30-second bursts.
Leftover dip can be stored in an airtight container in the refrigerator for up to 3 days. Let it cool to room temperature (but not more than 2 hours) before refrigerating.
To reheat, place it in a small saucepan over low heat, stirring frequently, or microwave in 30-second intervals, stirring between each, until hot. The texture may become slightly thicker after refrigeration; stir in a splash of milk or cream to restore creaminess.
This dip can be assembled up to 24 hours in advance. Combine all the ingredients in the slow cooker insert, cover, and refrigerate.
When ready to cook, place the insert in the slow cooker and cook on low for 90 minutes, adding about 15 minutes to the cooking time if starting from cold. You can also fully cook the dip, then keep it warm on the low setting for up to 2 hours before serving.
Serving ideas
Serve this dip warm, straight from the slow cooker, to keep it melted and inviting. Arrange a platter of sea-salt cucumber-rye crackers and toasted crostini around the Crockpot.
The crunchy, salty crackers contrast beautifully with the creamy, rich dip. For a touch of freshness, add extra dill sprigs and lemon wedges on the side for squeezing over individual servings.
This dip is perfect for parties, holidays, or any casual get-together. It’s also a great make-ahead appetizer for a dinner party—just set up the slow cooker and let it work its magic. For a more substantial spread, serve alongside crudité, pita chips, or bagel chips. The dip pairs well with a crisp white wine or sparkling water with lemon.

Crockpot Smoked Salmon Dip with Dill and Lemon Zest

Ingredients
- 12 oz hot-smoked salmon, skin removed and flaked
- 8 oz mascarpone cheese
- 8 oz cream cheese, softened
- 1 1/2 cups shredded Fontina cheese
- 2 tbsp capers, drained
- 1 tbsp lemon zest
- 1/4 cup fresh dill, chopped, plus sprigs for garnish
- Cracked black pepper, to taste
- Sea-salt cucumber-rye crackers, for serving
- Toasted crostini, for serving
Instructions
- Place the flaked hot-smoked salmon, mascarpone, softened cream cheese, shredded Fontina, capers, lemon zest, and chopped fresh dill into the slow cooker insert. Stir gently with a mixing spoon until the ingredients are evenly distributed, but leave some larger flakes of salmon intact for texture.
- Add a generous amount of cracked black pepper to the mixture. Stir once more to incorporate the pepper evenly. The capers and smoked salmon already provide salt, so additional salt is not needed.
- Cover the slow cooker and set it to LOW. Cook for 90 minutes, stirring once halfway through. The dip should become bubbling gently around the edges and turn velvety smooth. Avoid lifting the lid frequently to maintain even heat.
- Once the dip is silky and fragrant, turn off the slow cooker. Garnish the top with fresh dill sprigs and an extra sprinkle of cracked black pepper if desired. The dip can be served directly from the warm ceramic insert.
- Set the slow cooker to the warm setting or serve immediately. Scoop the dip directly from the Crockpot with sea-salt cucumber-rye crackers and toasted crostini. The dip is best enjoyed warm while the cheeses are melted and the salmon is tender.
