Tips for success
For the smoothest cheesecake, use a food processor to blend the cream cheese and sugar before adding the eggs. This ensures no lumps. When folding in the white chocolate, do it in two additions to ensure it is evenly distributed. Use a rubber spatula and a gentle hand to keep the batter airy.
To get clean slices, chill the cheesecake for at least 6 hours, preferably overnight. Use a long, thin knife and wipe it clean between cuts. For a professional look, dip the knife in hot water and dry it before each slice. This melts the cheesecake slightly as you cut, producing smooth edges.
Variations
- Chocolate Swirl: Replace the raspberry reduction with melted dark chocolate. Drop spoonfuls over the batter and swirl as directed. The bitterness of dark chocolate complements the sweet white chocolate cheesecake.
- Citrus Twist: Add 1 tablespoon of lemon zest to the batter along with the sugar. Use a lemon curd instead of raspberry reduction for a bright, tangy swirl.
- Berry Medley: Use a mixed berry reduction made from raspberries, blueberries, and blackberries. The deeper color and varied flavors add complexity to the cheesecake.
- Nutty Crunch: Sprinkle a layer of crushed shortbread cookies or graham cracker crumbs on the bottom of the pan before adding the batter. This adds a buttery crunch that contrasts with the creamy filling.
Storage and make-ahead
- Fridge
- Store leftover cheesecake in an airtight container in the refrigerator for up to 5 days. Keep it covered to prevent drying.
- Freezer
- Freeze the cheesecake tightly wrapped in plastic and foil for up to 2 months. Thaw overnight in the refrigerator before serving.
- Reheat
- Cheesecake is best served cold. If desired, let slices sit at room temperature for 10 minutes before serving. Do not microwave, as it will melt the cheesecake.
Store the cheesecake in the refrigerator, covered, for up to 5 days. Keep it in the springform pan or transfer to an airtight container.
The cheesecake should be kept away from strong-smelling foods as it can absorb odors. If garnished with fresh raspberries, add them just before serving to prevent them from weeping.
The cheesecake can be made up to 2 days ahead. Prepare and bake as directed, then cool completely and refrigerate without garnishing. Cover tightly with plastic wrap or foil.
Add the fresh raspberries and white chocolate shavings just before serving. The cheesecake also freezes well for up to 2 months—wrap tightly in plastic and foil, then thaw in the refrigerator overnight.
Serving ideas
Serve the cheesecake chilled, straight from the refrigerator, for the cleanest slices. Let it sit at room temperature for 10-15 minutes if you prefer a softer texture.
The raspberry swirl provides a bright, fruity contrast, so a simple dusting of powdered sugar is all that's needed—or skip it and let the marbled top shine.
Pair each slice with a dollop of lightly sweetened whipped cream or a scoop of vanilla ice cream for extra indulgence.
For a special occasion, drizzle a little raspberry coulis on the plate before placing the cheesecake. The dessert pairs beautifully with coffee, espresso, or a glass of dessert wine.

Raspberry White Chocolate Swirl Cheesecake

Ingredients
- 750 g cream cheese, softened
- 150 g granulated sugar
- 3 large eggs
- 200 g white chocolate, melted
- seedless raspberry reduction (homemade or store-bought), to taste
- fresh raspberries, for garnish, to taste
- white chocolate shavings, for garnish, to taste
Instructions
- Preheat the oven to 320°F (160°C). In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Gently fold in the melted white chocolate until fully incorporated.
- Pour the cheesecake batter into a 9-inch springform pan lined with parchment paper. Smooth the top with a spatula. Prepare the raspberry reduction by ensuring it is thick and pourable.
- Drop spoonfuls of the seedless raspberry reduction over the top of the batter. Use a skewer or knife to gently swirl the raspberry through the batter, creating a marbled pattern. Be careful not to overmix.
- Place the cheesecake in the preheated oven and bake for 60 minutes, or until the edges are set and the center is slightly moist but not liquid. The cheesecake should be golden on top.
- Turn off the oven and let the cheesecake cool inside for 1 hour. Then transfer to a wire rack and cool completely. Once cool, refrigerate for at least 4 hours or overnight to fully set.
- Run a thin knife around the edge of the pan before releasing the springform. Garnish the top with fresh raspberries and white chocolate shavings. Slice with a sharp, warm knife for clean cuts.
