Tips for success

For the best flavor, use freshly grated Parmesan rather than the pre-shredded kind. The anti-caking agents in pre-shredded cheese can make the sauce slightly gritty.

If you have time, let the cream cheese soften fully before adding—it will melt into the sauce more smoothly. For a thicker sauce, leave the slow cooker uncovered for the last 20 minutes of cooking.

This recipe is endlessly adaptable: try adding a pinch of garlic powder or a few fresh thyme sprigs for extra depth. If you prefer a bit of heat, stir in a teaspoon of hot sauce before serving.

The dish is also delicious over rice, mashed potatoes, or even crusty bread. Leftovers can be refrigerated for up to 4 days and taste even better the next day.

Variations

  • Add Bacon: Stir in 4 slices of cooked, crumbled bacon just before serving for a smoky, salty crunch that pairs beautifully with the creamy sauce.
  • Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a diced jalapeño along with the other ingredients for a subtle heat that balances the richness.
  • Herb Infusion: Add 2 sprigs of fresh thyme and 1 bay leaf to the slow cooker before cooking. Remove them before shredding for a subtle, earthy note.
  • Vegetable Boost: Add 1 cup of frozen peas or diced carrots during the last 30 minutes of cooking for extra color and texture.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or milk to restore the creamy texture.
Freezer
Freeze in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating gently on the stovetop or in the microwave.
Reheat
Reheat in a saucepan over medium-low heat, stirring often, or in the microwave in 30-second bursts, until hot and bubbly.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; add a splash of chicken broth or milk when reheating to loosen it to the desired consistency.

Reheat gently on the stovetop or in the microwave, stirring occasionally, until warmed through.

This dish can be assembled the night before: place all the raw ingredients in the slow cooker insert, cover, and refrigerate overnight. In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the cold start.

Serving ideas

Serve the creamy chicken and corn over warm buttered egg noodles, with the sauce generously spooned over the top.

A sprinkle of fresh chopped parsley or chives adds a bright, fresh note, though the dish is delicious as-is. For a complete meal, pair with a simple green salad or steamed broccoli.

The leftovers are just as good: reheat and serve over rice or toasted bread for a quick lunch. The sauce also makes a wonderful topping for baked potatoes. For a heartier meal, add a side of crusty bread to soak up every last bit of the velvety gravy.

Frequently asked questions

Can this recipe be made with chicken breasts instead of thighs?
Yes, boneless, skinless chicken breasts can be substituted, but they may dry out more easily. Cook on LOW for 4–5 hours, and check for doneness at 165°F (74°C). Shred or slice the breasts before serving.
Why is the sauce thin?
The sauce may be thin if the slow cooker was on HIGH or if too much moisture was released from the chicken. To thicken, remove the lid and cook on HIGH for an additional 15–20 minutes, or stir in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water.
Can this dish be made ahead and frozen?
Yes, the cooked dish freezes well for up to 3 months. Cool completely, transfer to an airtight container, and freeze. Thaw overnight in the refrigerator and reheat gently, adding a splash of broth or milk to restore the creamy texture.
What can be used instead of cream of potato soup?
Cream of chicken soup or cream of mushroom soup are the closest substitutes. For a homemade version, use a white sauce made with butter, flour, and milk, seasoned with salt and pepper.
How should leftovers be reheated?
Reheat leftovers in a saucepan over medium-low heat, stirring often, or in the microwave in 30-second bursts. Add a splash of chicken broth or milk to loosen the sauce if it has thickened in the refrigerator.

Velvety Parmesan Sweet Corn Chicken Thighs Crockpot Dinner

Prep 10 minCook 6 hTotal 6 h 10 minServes 6
Slow cooker full of creamy Parmesan sweet corn chicken thighs, with a spoon lifting a saucy bite.

Ingredients

  • 2 lb boneless, skinless chicken thighs
  • 2 cups frozen sweet corn kernels
  • 1 can (10.5 oz) condensed cream of potato soup
  • 8 oz cream cheese, softened
  • 1/2 cup freshly grated Parmigiano-Reggiano
  • warm buttered egg noodles, for serving

Instructions

  1. Place the chicken thighs evenly across the bottom of a 6-quart slow cooker. Scatter the sweet corn kernels over the chicken. Pour the condensed cream of potato soup over the center. Add the softened cream cheese and the grated Parmigiano-Reggiano on top. Do not stir.
  2. Cover the slow cooker and cook on LOW for 6 hours, or on HIGH for 3 hours, until the chicken is tender and easily shreds. Do not lift the lid during the first 4 hours on LOW or 2 hours on HIGH to keep the heat steady.
  3. Once the chicken is cooked through, use two forks to shred the thighs directly in the slow cooker. Stir everything together to combine the sauce, corn, and shredded chicken. The sauce will thicken slightly as it sits.
  4. Spoon the creamy chicken and corn mixture over warm buttered egg noodles. Serve immediately, with extra Parmesan on the side if desired.
