Tips for success
For the best flavor, use freshly grated Parmigiano-Reggiano — it melts into the sauce more smoothly than pre-shredded cheese and adds a nutty, salty kick.
If you don’t have cream cheese, you can substitute with mascarpone or even a block of cream cheese with herbs for extra flavor. The condensed soup is non-negotiable; it provides the body and seasoning that make this dish so satisfying.
To make this recipe even easier, you can assemble the entire slow cooker insert the night before and refrigerate it overnight. In the morning, just place it in the base and turn it on.
This is a great make-ahead trick for busy mornings. If you prefer a thicker sauce, use a slotted spoon to remove some of the liquid before shredding the chicken, then stir the sauce back in as needed.
Variations
- Add Mushrooms: Sauté sliced mushrooms in butter until golden, then add them to the slow cooker with the chicken. They’ll soak up the creamy sauce and add an earthy depth. If using canned mushrooms, drain and add them during the last 30 minutes.
- Spicy Kick: Add a pinch of red pepper flakes or a diced jalapeño to the slow cooker before cooking. The heat will mellow as it cooks, leaving a subtle warmth. Serve with extra hot sauce on the side for those who want more fire.
- Swap the Protein: Use boneless, skinless chicken breasts instead of thighs, but reduce the cooking time to 3 hours on low. Or try turkey breast cutlets for a leaner option. The sauce works well with any poultry.
- Vegetarian Version: Replace the chicken with a can of drained chickpeas and use cream of mushroom soup instead of chicken. Add the chickpeas during the last 30 minutes so they don’t get mushy. The broccoli and creamy sauce will still be delicious.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through.
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.
To reheat, warm gently in a saucepan over medium-low heat, adding a splash of chicken broth or milk if the sauce has thickened. You can also microwave individual portions, but be careful not to overcook the chicken.
This dish is perfect for meal prep. Cook the entire recipe, then portion it into individual containers with cooked noodles or rice. It will keep in the refrigerator for up to 4 days.
For longer storage, freeze in airtight containers for up to 3 months. Thaw overnight in the refrigerator before reheating. The sauce may separate slightly after freezing, but a good stir will bring it back together.
Serving ideas
Serve this creamy chicken and broccoli over buttered egg noodles for a classic, comforting combination. The noodles soak up the velvety sauce, making every bite rich and satisfying. Alternatively, serve over steamed white rice, mashed potatoes, or even cauliflower rice for a lower-carb option. A side of crusty bread is also great for mopping up any extra sauce.
For a complete meal, add a simple green salad with a tangy vinaigrette to cut through the richness. Roasted asparagus or a crisp cucumber salad would also complement the dish nicely. If you have leftovers, they make a fantastic filling for a baked potato or a hearty sandwich. The possibilities are endless, and the flavor is always a hit.

Velvety Parmesan Broccoli Chicken Thighs: One-Pot Crockpot Dinner

Ingredients
- 2 lb boneless skinless chicken thighs
- 4 cups broccoli florets (about 1 large head)
- 1 can (10.5 oz) condensed cream of chicken soup
- 8 oz cream cheese, softened
- 1 cup freshly grated Parmigiano-Reggiano
- 12 oz buttered egg noodles, cooked
Instructions
- Place the chicken thighs in an even layer in the bottom of a 6-quart slow cooker. Scatter the broccoli florets around and over the chicken. Spoon the condensed cream of chicken soup over the top, spreading it slightly. Add the softened cream cheese in dollops and sprinkle with the grated Parmesan.
- Cover the slow cooker with the lid. Cook on low for 4 hours, or on high for 2 1/2 to 3 hours, until the chicken is cooked through and tender. Do not stir during the first 2 hours to allow the cream cheese to melt gradually.
- Once the chicken is cooked through and reaches 165°F (74°C), use two forks to shred the thighs directly in the slow cooker. Stir the shredded chicken into the sauce, coating it well. The broccoli will break apart slightly as you stir, which helps thicken the gravy.
- Stir the sauce until it is smooth and velvety. If the sauce seems thin, let it cook uncovered for 10 to 15 minutes to thicken. Taste and adjust seasoning with salt and pepper, if desired.
- Spoon the hot buttered egg noodles onto plates or a platter. Top with the creamy chicken and broccoli mixture, making sure to get plenty of sauce. Serve immediately.
