This Urfa baked chickpea tava turns humble pantry staples into a deeply savory, smoky one-dish dinner. Chickpeas, peppers, and tomatoes are tossed with olive oil and warm spices, then baked under wet parchment until the vegetables caramelize and the chickpeas soak up all the juices. Serve it straight from the glass baking dish with torn flatbread for a meal that feels both rustic and special.

A wide glass baking dish does more than hold this dish—it helps it cook evenly and lets you see the bubbling, caramelizing edges as they develop. The combination of sweet red kapya pepper, mild green sivri peppers, and ripe tomatoes creates a rich base, while Urfa isot flakes add a smoky, slightly tangy depth that defines the flavor.

Baked low and slow at first, then uncovered to finish, the chickpeas become tender and the vegetables collapse into a silky, jammy mixture. This is the kind of dinner that comes together in minutes but tastes like it simmered for hours. Serve it with warm flatbread for a complete, satisfying meal.

Why this recipe works

Baking the chickpeas and vegetables under a sheet of wet parchment traps steam, which gently cooks the vegetables and chickpeas without drying them out. The steam softens the onions and peppers, allowing them to release their natural sweetness and meld with the spices.

Once the parchment is removed, the exposed top browns and caramelizes, creating pockets of intense, concentrated flavor. This two-stage method ensures the dish is both tender and beautifully charred.

The generous amount of olive oil is not just for richness—it carries the fat-soluble flavors of the pepper paste, Urfa isot, and cumin, coating every chickpea and vegetable piece.

As the dish bakes, the oil emulsifies with the tomato juices and pepper liquids, creating a glossy, spoonable sauce. The wide surface area of the baking dish encourages evaporation, intensifying the flavors and producing a tava that is both saucy and caramelized.

Notes and substitutions

Use cooked chickpeas that are tender but not mushy. Canned chickpeas work well; just be sure to rinse and drain them thoroughly. If you prefer to cook dried chickpeas, simmer them until just tender before using. The vegetables should be cut into similar-sized pieces so they cook evenly—thin onion slices, diced tomatoes, and sliced peppers all work well.

Turkish pepper paste is a key ingredient, but if you can't find it, tomato paste with a pinch of smoked paprika is a good substitute.

Urfa isot flakes have a unique smoky, raisin-like flavor; if you don't have them, use a combination of smoked paprika and a tiny pinch of chili flakes. The wide glass baking dish is important for even cooking, but any oven-safe baking dish of similar size will work.

  • green sivri peppers: Italian frying peppers or 1 green bell pepper, sliced
  • red kapya pepper: 1 red bell pepper, diced
  • Turkish pepper paste: 1 tbsp tomato paste mixed with 1/2 tsp smoked paprika
  • Urfa isot flakes: 1 tsp smoked paprika plus a pinch of chili flakes for heat
