Tips for success
For the best fudgy texture, measure the flour correctly by spooning it into the measuring cup and leveling off with a knife. Do not scoop directly from the bag, as this can pack in too much flour. Use a light hand when folding in the flour and chocolate chips, stopping as soon as no dry streaks remain.
Overmixing at this stage is the most common reason brownies become cakey instead of fudgy. Also, let the brownies cool completely before cutting if you want very clean, neat squares; a warm brownie will crumble more easily.
If you prefer a more intense red color, use gel food coloring rather than liquid, as it is more concentrated and will not thin the batter. You can also add an extra teaspoon of cocoa powder for a deeper chocolate flavor.
When swirling the cheesecake, use a butter knife or a skewer and make only a few figure-eight motions. Over-swirling will muddy the colors. If the brownies are not quite done at 28 minutes, check in 2-minute increments, but remember that the center will continue to set as it cools.
Variations
- Peppermint Swirl: Add 1/2 teaspoon peppermint extract to the cheesecake filling and fold 1/4 cup crushed peppermint candies into the brownie batter before baking. Omit the dark chocolate chips or use white chocolate chips for a festive look.
- Chocolate Chip Swap: Use milk chocolate chips or white chocolate chips instead of dark chocolate chips for a sweeter brownie. For a double-chocolate version, add 1/4 cup extra chocolate chips on top before baking.
- Gluten-Free: Replace the all-purpose flour with a 1-to-1 gluten-free baking flour blend. Ensure the blend contains xanthan gum or add 1/4 teaspoon. The brownies will have a slightly different texture but remain fudgy and delicious.
- Nutty Crunch: Fold 1/2 cup chopped walnuts or pecans into the red velvet batter along with the chocolate chips. Toast the nuts first for extra flavor. The nuts add a crunchy contrast to the soft, fudgy texture.
Storage and make-ahead

- Freezer
- Wrap tightly in plastic wrap and foil, freeze for up to 3 months. Thaw overnight in the fridge.
- Reheat

Store the brownies in an airtight container at room temperature for up to 4 days. If the kitchen is warm, refrigerate them to keep the cheesecake swirl firm. Place a sheet of parchment paper between layers to prevent sticking. Bring refrigerated brownies to room temperature before serving for the best texture and flavor.
The brownies can be baked up to 2 days ahead and stored in an airtight container at room temperature. They also freeze well for up to 3 months. To freeze, wrap the cooled brownies tightly in plastic wrap and then in aluminum foil, or place in a freezer-safe container. Thaw overnight in the refrigerator or at room temperature for a few hours before serving.
Serving ideas
Serve the red velvet cheesecake brownies at room temperature for the ideal texture, or slightly warm if you prefer a gooier center. They are delicious on their own, but a scoop of vanilla ice cream or a dollop of whipped cream makes an indulgent dessert.
For a festive presentation, dust the tops with a little confectioners' sugar just before serving, or drizzle with a simple white chocolate glaze. Cut them into larger squares for a generous dessert or smaller bites for a party platter.
These brownies are also excellent as a base for an ice cream sundae, crumbled over yogurt, or used as a crust for a cheesecake. The red and white swirl makes them a striking addition to any dessert table, especially for Valentine's Day, Christmas, or a birthday.
Pair them with a glass of cold milk or a cup of hot coffee. The tangy cheesecake and rich chocolate are a timeless combination that appeals to both children and adults.

Ultra-Fudgy Red Velvet Cheesecake Brownies

Ingredients
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tbsp red food coloring
- 2 tsp pure vanilla extract
- 1 tsp white vinegar
- 2 large eggs
- 3/4 cup all-purpose flour
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 tsp pure vanilla extract
- 3/4 cup dark chocolate chips
Instructions
- Heat the oven to 350°F (175°C). Line an 8-inch square baking pan with aluminum foil or parchment paper, leaving overhang on two sides. In a large bowl, whisk the melted butter and granulated sugar until well combined. Whisk in the cocoa powder, red food coloring, vanilla extract, and vinegar until smooth. Add the two eggs one at a time, whisking thoroughly after each addition. The batter should be glossy and deep red.
- In a separate medium bowl, beat the softened cream cheese with an electric mixer on medium speed until completely smooth. Add the 1/4 cup granulated sugar, the remaining egg, and 1/2 teaspoon vanilla extract. Beat until the mixture is creamy and free of lumps, scraping down the sides of the bowl as needed. The filling should be thick but spreadable.
- Pour the red velvet batter into the prepared pan and spread it into an even layer. Drop spoonfuls of the cheesecake mixture over the top of the batter. Use a butter knife or a skewer to gently swirl the cheesecake through the red velvet batter, creating marbled ribbons. Be careful not to over-swirl, as the cheesecake should remain visible in distinct white ribbons. Sprinkle the remaining 1/4 cup of dark chocolate chips evenly over the top.
- Place the pan in the preheated oven and bake for 28 minutes, or until the edges are set and the center is just set but still dense and fudgy. The top should look slightly cracked and a toothpick inserted into the center should come out with a few moist crumbs attached, not wet batter. The internal temperature of the brownie should reach at least 160°F (71°C) in the center to ensure the eggs are fully cooked.
- Once the brownies have cooled for at least 30 minutes, use the foil or parchment overhang to lift the entire block out of the pan. Place on a cutting board and use a sharp knife to cut into 16 squares. Wipe the knife clean between cuts for neat edges. Serve the brownies at room temperature or slightly warm. The texture should be dense, moist, and fudgy with visible cheesecake ribbons and melted chocolate chips.
