Before you start

Before beginning, ensure all ingredients are measured and ready to go. The onions should be thinly sliced for even cooking, and the ground beef should be shaped into patties that approximate the dimensions of your bread.

Having all components organized near the stove will prevent any frantic searching while the skillet is hot. Ensure your spatula is sturdy enough to handle the flipping of the finished sandwich without breaking the crust.

Ingredients at a glance (4)
  • 1/2 lb ground beef
  • 4 slices sourdough bread
  • 4 slices Swiss cheese
  • 1 large yellow onion, thinly sliced

Instructions

Caramelizing the onions

  1. Caramelize the onions
Add the thinly sliced onions to a large skillet over medium-low heat. Cook, stirring occasionally, until they are deep golden brown and soft, about 15 to 20 minutes. Remove them from the pan and set aside.
Look for Onions should be soft, sweet, and deep golden brown.
Tip Do not rush the onions; low and slow heat is essential for developing the natural sugars.

The onions are ready when they have reduced significantly in volume and taken on a deep, rich mahogany color. They should smell sweet and fragrant, with no signs of charred or burnt edges. If the pan seems dry, add a small splash of water to deglaze and scrape up any flavorful brown bits from the bottom before proceeding to the next step.

Searing the patties

  1. Cook the beef patties
Shape the ground beef into two thin patties that match the size of your bread slices. Increase the skillet heat to medium-high and sear the patties for 3 to 4 minutes per side until they reach an internal temperature of 160°F (71°C). Remove the patties and let them rest for 5 minutes.
Look for Patties should have a nice crust on the outside and be fully cooked.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Ensure the patties are thin so they cook evenly without burning the bread later.

The patties should be seared until a dark, flavorful crust has formed on both sides. Use a meat thermometer to verify the internal temperature of 160°F (71°C) at the thickest point. The patties should be firm to the touch and hold their shape when transferred from the skillet to the waiting bread slices for assembly.

Toasting the sandwich

  1. Assemble and toast
Place two slices of bread in the skillet. Top each with a slice of cheese, the cooked patty, the caramelized onions, and another slice of cheese. Close the sandwich with the remaining bread. Cook until the bread is golden brown and the cheese is completely melted, flipping once.
Look for Bread should be golden and crispy with cheese visibly oozing from the sides.
Tip Use a heavy press or spatula to gently compress the sandwich for better heat distribution.

The final phase is complete when both sides of the bread are a consistent, toasted gold and the Swiss cheese is visibly bubbling at the edges of the sandwich.

The crust should sound crisp when tapped with a knife, and the entire structure should feel unified and cohesive, indicating that the heat has successfully penetrated the layers to melt the cheese.

Common mistakes

A common mistake is using heat that is too high, which leads to burnt bread before the cheese has had a chance to melt through the center. Always maintain a medium-low flame for the final toasting phase.

Another frequent error is overcrowding the skillet; ensure each sandwich has ample space to allow for proper airflow and even contact with the hot surface. Finally, neglecting to let the beef rest after searing can result in juices leaking into the bread, causing it to lose its crispness.

How to tell it’s done

The patty melt is ready when the bread is a deep, uniform golden brown and the cheese has achieved a fully fluid, molten state. The internal temperature of the beef patty must reach 160°F (71°C) to ensure it is cooked through.

When pressed gently with a spatula, the sandwich should feel firm, and the cheese should show signs of stretching when the sandwich is pulled apart for serving.

  • Ground meat: 160°F (71°C) in the thickest part
