Tips for success
For the chewiest cookies, use a combination of brown sugar and granulated sugar, and do not overbake. Pull them out of the oven when the edges are set but the centers still look slightly moist.
The residual heat will finish the cooking process. Also, chilling the dough for at least 30 minutes before baking can help prevent spreading and enhance the flavor.
To get that classic bakery look, press a few extra chocolate chips or chunks onto the top of each dough ball before baking. This ensures that the chocolate is visible and gooey on the surface.
Use a cookie scoop for uniform size, which helps them bake evenly. If you prefer crispier cookies, bake for an additional 1-2 minutes, but keep a close eye on them.
Variations
- Nutty Addition: Fold in 1 cup of toasted chopped walnuts or pecans along with the chocolate. The nuts add a crunchy texture and a toasty flavor that pairs well with the chocolate.
- Peanut Butter Swirl: After scooping the dough, place a small dollop of peanut butter on top and swirl it in with a toothpick before baking. This adds a creamy, salty contrast to the sweet chocolate.
- Double Dark Chocolate: Replace the milk chocolate chips with dark chocolate chunks, and add 2 tablespoons of unsweetened cocoa powder to the dry ingredients. This creates a deeply chocolatey cookie with a rich flavor.
- Sea Salt Caramel: Press a soft caramel candy into the center of each dough ball before baking. The caramel melts and becomes gooey, and the flaky sea salt on top enhances the sweet-salty combination.

Store the baked cookies in an airtight container at room temperature for up to 5 days. To keep them soft, add a slice of bread to the container; the cookies will absorb the moisture from the bread.
For longer storage, freeze the baked cookies in a single layer on a baking sheet, then transfer to a freezer-safe bag for up to 3 months.
The cookie dough can be made ahead and refrigerated for up to 3 days. Alternatively, scoop the dough into balls and freeze them on a baking sheet until solid, then transfer to a freezer bag.
You can bake the frozen dough directly from the freezer, adding 2-3 minutes to the baking time. This makes it easy to have fresh cookies anytime.
Serving ideas
Serve these cookies warm with a glass of cold milk or a scoop of vanilla ice cream. The contrast of warm, gooey chocolate and cold, creamy ice cream is irresistible. For an extra indulgent treat, sandwich two cookies with a scoop of ice cream to make an ice cream sandwich.
These cookies are perfect for sharing at parties, potlucks, or as an after-school snack. Arrange them on a platter and let everyone grab their favorite. They also make great gifts when packed in a decorative tin or box. The flaky sea salt on top adds a touch of elegance and enhances the chocolate flavor.

Two-Chip Bakery Cookies with Crispy Edges

Ingredients
- 1 cup softened butter
- 1 cup dark brown sugar
- 1/2 cup granulated sugar
- 2 cold eggs
- 2 tsp vanilla bean extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 2 tsp cornstarch
- 1 cup milk chocolate chips
- 1 cup dark chocolate chunks
- flaky sea salt, for finishing, to taste
Instructions
- In a large mixing bowl, beat the softened butter with the dark brown sugar and granulated sugar until light and fluffy. Add the cold eggs one at a time, beating well after each addition, then beat in the vanilla bean extract. Continue beating until the mixture is pale and airy.
- In a separate bowl, sift together the all-purpose flour, baking soda, and cornstarch. Sifting aerates the flour and ensures the leavener is evenly distributed.
- Add the dry flour mixture to the butter mixture. Use a rubber spatula to fold gently until just combined, being careful not to overmix. The dough will be thick and slightly sticky.
- Fold in the milk chocolate chips and dark chocolate chunks until they are evenly distributed throughout the dough. The dough should be studded with both types of chocolate.
- Using a cookie scoop or spoon, portion the dough into large balls, about 2 tablespoons each. Place them on baking sheets lined with parchment paper, spacing them about 2 inches apart.
- Bake the cookies in a preheated 375°F (190°C) oven for 11 minutes, until the edges are golden and caramelized but the centers still look slightly moist. The cookies will continue to set as they cool.
- Immediately after removing the cookies from the oven, sprinkle each with a pinch of flaky sea salt. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
