Tips for success
For the juiciest meatballs, handle the meat as little as possible when mixing and rolling. Overworking the meat can make it tough.
Use a light touch and stop as soon as the ingredients are combined. If the mixture feels too sticky, wet your hands with cold water to make rolling easier.
To make this dish even more flavorful, use a combination of tomato sauce and a splash of pasta water or broth.
The starch from the pasta helps thicken the sauce, but a little extra liquid ensures the pasta cooks evenly. If you prefer a spicier kick, add a pinch of red pepper flakes with the cumin.
Variations
- Spicy Turkish Sucuk: Add 1/2 cup sliced sucuk (Turkish fermented sausage) along with the meatballs and sear briefly. This adds a spicy, garlicky flavor that pairs well with the tomato sauce.
- Vegetarian Mushroom: Replace the ground beef with 1 1/2 cups finely chopped mushrooms and an extra 1/2 cup cooked lentils. Season with the same spices and proceed as directed, cooking until the mushrooms are tender.
- Cheesy Pasta Bake: After stirring in the cheese, transfer the mixture to a baking dish, top with extra cheese, and broil for 2-3 minutes until bubbly and golden. This gives a crispy top layer.
- Herb-Infused: Add 1 tsp dried oregano or thyme to the meatball mixture, and stir in 2 tbsp chopped fresh dill or mint along with the parsley at the end for a fresher, more aromatic dish.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Add a splash of water when reheating to restore the sauce's consistency.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over medium-low heat, adding a little water or broth if needed. Or microwave in 30-second intervals, stirring between, until hot.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will absorb more sauce as it sits, so when reheating, add a splash of water or broth to loosen it. Reheat gently on the stovetop or in the microwave until piping hot.
The meatballs can be prepared up to 24 hours in advance and stored in the refrigerator. When ready to cook, sear them as directed, then proceed with the recipe.
You can also assemble the entire dish (without the cheese) and refrigerate it, then reheat and add the cheese just before serving.
Serving ideas
Serve this one-pot pasta hot, straight from the pot or in individual bowls. Garnish with extra chopped parsley and a few cracks of black pepper. For a complete meal, pair with a simple green salad dressed with lemon and olive oil, or some crusty bread to mop up the sauce.
This dish is hearty enough to stand alone, but it also works well as part of a larger spread.
Consider serving it with a dollop of yogurt on the side—a common Turkish accompaniment that adds a cool, tangy contrast. Leftovers make a great lunch the next day, served cold or reheated.

Turkish One-Pot Meatball Pasta with Melted Cheese

Ingredients
- 400 g ground beef
- 1 small onion, grated
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp black pepper, freshly ground
- 2 tbsp olive oil
- 2 cups penne pasta
- 2 cups tomato sauce
- 1 cup water
- 1 cup kaşar cheese, shredded
- 1/4 cup fresh parsley, chopped
Instructions
- In a large bowl, combine the ground beef, grated onion, breadcrumbs, minced garlic, cumin, salt, and black pepper. Use your hands to knead the mixture until everything is evenly incorporated and the mixture holds together when pressed. Roll the mixture into small, bite-size spheres, about 1 inch in diameter. You should have about 20 mini meatballs.
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the meatballs in a single layer and sear until browned on all sides, about 4-5 minutes total. Turn them gently with a spoon to brown evenly. The meatballs do not need to be cooked through at this stage; they will finish cooking in the sauce.
- Add the penne, tomato sauce, water, and a pinch of salt to the pot with the meatballs. Stir gently to combine, making sure the pasta is submerged in the liquid. Bring the mixture to a simmer over medium heat.
- Cover the pot with a lid and reduce the heat to medium-low. Let the mixture simmer gently for about 12 minutes, stirring once halfway through, until the pasta is tender and has absorbed most of the sauce. The meatballs should be cooked through.
- Remove the pot from the heat. Sprinkle the shredded kaşar cheese over the pasta and meatballs, then gently fold it in with a spatula or wooden spoon until the cheese is melted and creamy throughout. The residual heat will melt the cheese without making it stringy.
- Spoon the pasta and meatballs into serving bowls. Garnish each bowl with a generous sprinkle of fresh parsley and a few cracks of black pepper. Serve hot, with extra cheese on the side if desired.
