Tips for success
For the best texture, roll the dough as evenly as possible, keeping it about 1/4-inch thick. If the dough resists, let it rest for a few minutes before rolling again.
This relaxes the gluten and makes shaping easier. Also, don't be afraid to use a little extra flour on the work surface to prevent sticking.
When brushing the egg yolk, use a light hand—too much can pool and create a rubbery layer.
If you prefer a softer crust, you can brush the pide with melted butter instead of egg yolk, but the egg gives that classic golden sheen. Serve the pide warm, as it loses its crispness when cooled.
Variations
- Spicy Beef Pide: Add 1-2 teaspoons of red pepper flakes or a chopped fresh chili to the filling along with the black pepper. This gives the pide a pleasant kick that pairs well with the buttery crust.
- Cheese and Herb Pide: For a vegetarian version, replace the beef with a mixture of crumbled feta, chopped spinach, and fresh dill. Sauté the onions and then add the spinach until wilted, then stir in the cheese before filling.
- Lamb and Mint Pide: Substitute ground lamb for the beef and add a teaspoon of dried mint to the filling. The mint pairs beautifully with lamb and adds a fresh, aromatic note.
- Breakfast Pide: Fill the pide with a mixture of scrambled eggs, crumbled sucuk or sausage, and a little grated cheese. Bake as directed, but reduce the baking time to 10 minutes, since the filling is already cooked.

- Reheat
- To reheat refrigerated pide, place on a baking sheet and warm in a 350°F (175°C) oven for 5–7 minutes. For frozen pide, bake at 375°F (190°C) for 15–20 minutes.
Store leftover pide in an airtight container in the refrigerator for up to 3 days. To reheat, place in a 350°F (175°C) oven for 5–7 minutes, or until heated through. The crust will crisp up again. Avoid microwaving, as it will make the crust soggy.
The dough can be prepared a day ahead and kept in the refrigerator. Let it come to room temperature before shaping.
The filling can also be made ahead and refrigerated. When ready to bake, assemble and bake as directed. This makes it easy to serve fresh pide on a busy weeknight.
Serving ideas
Serve the pide hot, sliced crosswise into thick pieces. It's wonderful on its own, but a side of plain yogurt or a simple tomato and cucumber salad balances the richness. For a heartier meal, serve with a bowl of lentil soup or a fresh green salad with lemon vinaigrette.
This pide is also great for sharing. Cut it into smaller pieces and serve as an appetizer or party snack.
The crisp crust and juicy filling are best enjoyed immediately, but leftovers are still tasty. Pair with a glass of ayran or a light red wine for a complete Turkish experience.

Turkish Karadeniz Pidesi with Buttery Ground Beef Filling

Ingredients
- 300 g bread flour
- 180 ml warm water
- 1 tsp active dry yeast
- 1 tsp salt
- 300 g ground beef (80/20)
- 2 onions, finely chopped
- 1 tbsp butter
- 1 tsp black pepper
- 1 tsp salt
- 1 egg yolk, beaten
- 50 g Trabzon village butter, melted
- Fresh parsley, chopped, for garnish, to taste
Instructions
- In a large bowl, combine the bread flour, salt, and yeast. Add the warm water and mix until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rest in a warm spot for about 1 hour, until doubled in size.
- While the dough rests, melt the butter in a skillet over medium heat. Add the finely chopped onions and sauté until translucent, about 3 minutes. Add the ground beef, black pepper, and salt. Cook, breaking up the meat with a spoon, until the beef is browned and cooked through, about 5–7 minutes. Remove from heat and let cool slightly.
- Preheat the oven to 240°C (465°F) with a pizza stone or baking sheet inside. Punch down the dough and divide it into two equal pieces. On a floured surface, roll each piece into a long oval, about 1/4-inch thick. Spread half of the beef filling down the center of each oval, leaving a border. Fold the two long edges over the filling and pinch the ends to seal, forming a canoe shape.
- Beat the egg yolk with a tablespoon of water. Brush the top and sides of each pide generously with the egg wash. This will give the crust a glossy, golden finish as it bakes.
- Carefully transfer the pides to the hot pizza stone or baking sheet. Bake at 240°C (465°F) for 12 minutes, until the crust is deeply blistered, golden brown, and crisp. The filling should be bubbling and hot.
- Remove the pides from the oven and immediately brush the hot crust with the melted Trabzon village butter. The butter will sizzle and soak into the crust. Sprinkle with chopped fresh parsley, slice crosswise, and serve hot.
