Before you start

Before starting, ensure the milk is warm but not hot, about 110°F (43°C). Have all ingredients measured and ready. Line a baking sheet with parchment paper.

If using active dry yeast, proof it in the warm milk with a pinch of sugar for 5 minutes until frothy. Prepare the sausage slices and have the butter melted for brushing. Set up a clean, floured surface for kneading and shaping.

Ingredients at a glance (11)
  • 2 cups warm milk
  • 1/2 cup vegetable oil
  • 1 packet active dry yeast (2 1/4 tsp)
  • 2 tbsp granulated sugar
  • 1 tsp salt
  • 4 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 12 small cooked sausage slices
  • 1 egg yolk
  • 1 tbsp milk (for wash)
  • 1 tsp nigella seeds (for eyes and nose)

Instructions

Mixing and Kneading

  1. Mix and Knead the Dough
In a large bowl, combine the warm milk, vegetable oil, and active dry yeast. Let stand for 5 minutes until frothy. Stir in the sugar, salt, and 2 cups of flour. Mix until a sticky dough forms. Gradually add the remaining flour, 1/2 cup at a time, until a soft dough forms. Turn onto a floured surface and knead for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a towel, and let rise in a warm place until doubled, about 1 hour.
Look for The dough becomes smooth, elastic, and springs back when poked.
Tip Warm the milk to about 110°F (43°C) to activate the yeast without killing it.
  2. Shape the Bunny Buns
Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a long rope about 8 inches long. Brush each rope with melted butter. Fold the rope in half to form a U shape, then twist the two ends together to create the bunny ears. Place on a parchment-lined baking sheet. Tuck a sausage slice into the center of each bunny face, pressing gently.
Look for The dough ropes are pliable and easy to shape without tearing.
Tip Keep the dough covered with a towel while shaping to prevent drying.

The dough should be smooth, elastic, and slightly sticky. After rising, it will have doubled in size and feel airy. When you poke it, the indentation should remain.

The dough should smell yeasty and slightly sweet. If it springs back too quickly, let it rise a bit longer. If it doesn't spring back at all, it may be over-proofed.

Shaping and Baking

  1. Add Faces and Egg Wash
Press two nigella seeds onto each bunny for the eyes and one for the nose. In a small bowl, whisk together the egg yolk and milk. Brush the egg wash generously over each bunny, covering the dough completely.
Look for The buns have cute bunny faces with seed eyes and a shiny golden coating.
Tip Brush the egg wash evenly to achieve a uniform golden color after baking.
  2. Bake the Buns
Preheat the oven to 325°F (170°C). Bake the bunny buns for 20-22 minutes, until golden brown and puffed. The internal temperature of the dough should reach 190°F (88°C) for fully baked bread.
Look for The buns are deeply golden, puffed, and fragrant.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip If the buns brown too quickly, tent loosely with foil.

The shaped bunnies should be uniform in size and have distinct ears. The egg wash will give them a glossy sheen. After baking, they should be golden brown and puffed. The kitchen will smell of fresh bread and butter. The buns should feel light and airy when picked up.

Butter Brushing and Serving

  1. Brush with Butter and Serve
Remove the buns from the oven and immediately brush the warm buns with melted butter. Let cool for 5 minutes on the baking sheet, then transfer to a wire rack. Serve warm, tearing open to reveal the soft, pillowy crumb and savory sausage surprise.
Look for The butter melts into the crust, creating a glossy, soft finish.
Tip Serve warm for the best texture and flavor.

After brushing with butter, the buns will have a soft, shiny crust. When you tear one open, the crumb should be soft and pillowy, with the sausage visible in the center. The steam rising from the warm bun is a good sign. Serve immediately for the best texture.

Common mistakes

A common mistake is over-kneading the dough, which can make the buns tough. Knead only until smooth and elastic, about 8-10 minutes. Another issue is letting the dough rise too long, which can cause it to collapse. Rise until doubled, about 1 hour.

When shaping, avoid using too much flour, which can dry out the dough. Also, ensure the sausage slices are fully cooked before adding to avoid undercooking. Finally, don't skip the egg wash—it gives the buns their beautiful color.

How to tell it’s done

The buns are done when they are golden brown on top and sound hollow when tapped on the bottom. The internal temperature of the dough should reach 190°F (88°C) for fully baked bread.

If using an instant-read thermometer, insert it into the thickest part of a bun without touching the sausage. The buns should be puffed and firm to the touch, and the egg wash should have created a shiny, golden crust. Let them cool slightly before serving.

  • Egg dishes: 160°F (71°C) in the thickest part
