Tips for success
For the best texture, do not overbake the bars. The brownie layer should be moist and fudgy, so pull them out of the oven when the top is crackly and a toothpick inserted into the center comes out with a few moist crumbs, not wet batter.
Letting the bars cool completely in the pan allows the layers to set and makes slicing much easier. If you prefer warm, gooey bars, serve them within 15 minutes of baking, but be prepared for less clean slices.
To get clean, professional-looking squares, chill the cooled bars in the refrigerator for about 30 minutes before slicing. Use a long, sharp knife and wipe it clean between cuts. This prevents the brownie from dragging and the Oreo layer from smearing.
For an extra indulgent touch, serve each bar with a scoop of vanilla ice cream or a drizzle of warm chocolate sauce. These bars are also delicious reheated in the microwave for 10 seconds to bring back the gooey texture.
Variations
- Peanut Butter Brookie Bars: Spread a thin layer of creamy peanut butter over the cookie dough before arranging the Oreos. The peanut butter adds a salty, nutty contrast to the chocolate. Use a natural peanut butter that is not too runny, and avoid stirring it into the brownie batter.
- Mint Chocolate Chip Brookies: Use mint-flavored chocolate chip cookie dough and add a few drops of peppermint extract to the brownie batter. Top the baked bars with a sprinkle of crushed mint candies or a drizzle of melted white chocolate. This variation is especially festive for the holidays.
- Salted Caramel Brookie Bars: Drizzle caramel sauce over the brownie batter before baking, then sprinkle flaky sea salt on top after the bars come out of the oven. The salt balances the sweetness and adds a sophisticated touch. Use a thick caramel that will not sink completely into the batter.
- Gluten-Free Brookie Bars: Use gluten-free chocolate chip cookie dough and a gluten-free brownie mix. Check that the Oreos are certified gluten-free, as some varieties contain wheat. The texture will be slightly different but still delicious. Follow the same layering and baking method.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature or warm slightly before serving.
- Freezer
- Wrap individual bars tightly in plastic wrap and place in a freezer-safe bag. Freeze for up to 3 months.
- Reheat
- Reheat a single bar in the microwave for 15-20 seconds, or in a 350°F (175°C) oven for 5-7 minutes until warm and gooey.
Store leftover brookie bars in an airtight container at room temperature for up to 3 days. They will stay moist and chewy. If the bars are cut and exposed to air, place a piece of parchment paper between layers to prevent sticking. For longer storage, refrigerate for up to a week, but bring them to room temperature before serving to soften the layers. The bars also freeze well, see freezer instructions.
The bars can be assembled up to 24 hours in advance and kept in the refrigerator, covered, before baking. Press the cookie dough, arrange the Oreos, and pour the brownie batter, then cover the pan tightly with plastic wrap and refrigerate.
When ready to bake, remove the pan from the refrigerator and let it sit at room temperature for 30 minutes, then bake as directed, adding 5 minutes to the bake time if needed. This is a great make-ahead dessert for parties or holidays.
Serving ideas
Serve these brookie bars warm or at room temperature, cut into 16 generous squares. Each bar is rich and satisfying on its own, but a scoop of vanilla ice cream or a drizzle of caramel sauce makes it even more indulgent. For a casual gathering, arrange the bars on a platter and let guests help themselves. They are sturdy enough to hold without crumbling, making them perfect for picnics or bake sales.
These bars are best enjoyed the same day they are baked, when the layers are at their peak: the cookie base chewy, the Oreo soft, and the brownie fudgy. If serving later, reheat individual bars in the microwave for 10-15 seconds to restore the gooey texture.
Pair them with a glass of cold milk for a classic combination. The bars are also wonderful with coffee or hot chocolate, and they make a great dessert for movie nights or game days.

Triple-Layer Oreo Brookie Bars: Cookie, Oreo & Brownie

Ingredients
- 1 lb chocolate chip cookie dough
- 16 Double Stuf Oreo cookies
- dark chocolate brownie batter (enough for a 9x9-inch pan), to taste
Instructions
- Heat the oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper, leaving overhang on two sides. Press the chocolate chip cookie dough evenly into the bottom of the pan, smoothing it into an even layer.
- Place the Double Stuf Oreos over the cookie dough in a grid pattern, spacing them evenly. Press each cookie gently into the dough so they sit flat and stay in place when the batter is poured.
- Pour the dark chocolate brownie batter over the Oreos, spreading it gently to cover them completely. Use a spatula to level the surface, but do not stir the layers together.
- Bake the bars at 350°F (175°C) for 30 minutes, until the top is shiny and forms a crinkle crust. The edges will be set and the center will look just barely moist. A toothpick inserted into the brownie layer (not through an Oreo) should come out with a few moist crumbs.
- Transfer the pan to a cooling rack and let the bars cool completely in the pan, about 1 hour. The internal temperature of the brownie layer should reach 160°F (71°C) to ensure the eggs are fully set. Do not cut while hot.
- Lift the bars out of the pan using the parchment overhang. Place on a cutting board and slice into 16 squares with a sharp knife. Serve warm or at room temperature, with each bar showing all three layers.
