Before you start

Before starting, ensure all components are ready: the cookie dough should be at room temperature for easy pressing, the caramel should be warm and pourable, and the ganache should be melted and smooth. Grate the dark chocolate and set aside.

Line a 9x9-inch metal tray with parchment paper, leaving overhang on two sides. Have a chef's knife and box grater on hand. Prepare a clean workspace, and if the dough is too firm, let it sit for a few minutes. The total assembly time is about 30 minutes, plus chilling time.

Ingredients at a glance (4)
  • 2 cups golden chocolate chip cookie dough (store-bought or made ahead)
  • 1 cup warm salted caramel sauce
  • 1 1/2 cups melted dark chocolate ganache
  • 1/2 cup grated dark chocolate curls (from a 70% dark chocolate block)

Instructions

Preparing the Components

  1. Chop the chocolate and cookie dough
Using a sharp chef's knife, chop the golden chocolate chip cookie dough truffles and any dark chocolate chunks into small pieces. Place them on a cutting board and chop until you have a mix of small chunks and crumbs. Set aside.
Look for The pieces should be about 1/4-inch, with some smaller bits for texture.
Tip Chilling the dough truffles briefly makes them easier to chop cleanly.
  2. Grate the dark chocolate
Take the solid block of 70% dark chocolate and grate it on a box grater using the large holes. Work over a plate or bowl to collect the fresh chocolate curls. You should have about 1/2 cup of curls.
Look for The curls will be light and airy, with a rich chocolate aroma.
Tip If the chocolate softens, chill it for a few minutes before grating.

At this stage, you should have chopped cookie dough pieces and grated chocolate curls ready. The dough pieces should be small and uniform, and the chocolate curls should be light and fluffy. The colors should be rich and inviting.

Check that the chocolate is grated to your desired size—smaller for a finer texture, larger for more visible curls. The kitchen will smell of chocolate and caramel, setting the stage for the layers to come.

Assembling the Layers

  1. Press the cookie dough base
Line a metal tray with parchment paper. Press the golden chocolate chip cookie dough evenly into the bottom of the tray, forming a smooth, even base layer. Make sure the dough reaches the edges.
Look for The base should be uniform and about 1/2-inch thick.
Tip Use a spatula or your fingers to press the dough firmly so it holds together.
  2. Pour the warm caramel
Warm the salted caramel sauce slightly if it has thickened. Pour the warm salted caramel over the pressed cookie dough base, spreading it gently to cover the surface evenly. Leave a small border at the edges if desired.
Look for The caramel should be pourable and spread into a thin, even layer.
Tip If the caramel is too thick, warm it in a microwave or saucepan until it flows.
  3. Spread the ganache
Pour the melted dark chocolate ganache over the caramel layer. Use a spatula to spread it smoothly across the entire surface, covering the caramel completely. Smooth the top to an even layer.
Look for The ganache should be glossy and spread without dragging the caramel.
Tip Work gently to avoid mixing the caramel into the ganache.

The cookie dough base should be pressed evenly, the caramel spread to cover it, and the ganache smoothed over the top. The surface should be glossy and the layers distinct. The caramel should not be visible at the edges, and the ganache should be level. The tray should feel heavy and full. This is the moment to ensure the layers are even and the top is smooth before chilling.

Finishing and Cutting

  1. Top with chocolate curls
Sprinkle the grated dark chocolate curls evenly over the ganache layer. Press them lightly so they stick. Let the bars set in the refrigerator for at least 1 hour, or until the ganache is firm.
Look for The curls should be distributed evenly and the top should look textured.
Tip Chilling helps the bars slice cleanly without smearing the layers.
  2. Cut and serve
Once set, lift the bars out of the tray using the parchment. Place on a cutting board and cut into squares with a sharp knife. Serve chilled or at room temperature, showing the fudgy layered interior.
Look for The bars should cut cleanly, revealing distinct layers of dough, caramel, and ganache.
Tip Wipe the knife between cuts for neat edges.

After chilling, the bars should be firm and the ganache set. The chocolate curls should be visible on top, adding texture and color. When you cut into the bars, the layers should be clean and distinct: a golden dough base, a caramel middle, and a dark ganache top. The bars should hold their shape and look fudgy and rich. The aroma should be a mix of chocolate, caramel, and buttery cookie dough.

Common mistakes

A common mistake is pressing the cookie dough too thinly or unevenly, which can cause the bars to fall apart. Ensure the dough is an even layer and reaches the edges. Another issue is pouring hot ganache directly over cold caramel, which can cause the caramel to seize or mix.

Let the ganache cool slightly before pouring. Overmixing or spreading the ganache too vigorously can also create swirls, which may be undesirable. To avoid this, pour the ganache gently and spread with a light hand. Finally, not chilling long enough can result in messy cuts.

How to tell it’s done

The bars are done when the ganache is set and firm to the touch, and the layers are distinct when cut. If you insert a toothpick into the center, it should come out with a bit of ganache but not liquid. The caramel should be set but still soft.

For best results, chill the bars for at least 1 hour, or up to overnight. When cutting, use a sharp knife and wipe it between cuts to get clean edges. The bars should hold their shape at room temperature for a short time, but are best served chilled or slightly cool.
