Tips for success
For the best cheese pull, let the knots rest for 2-3 minutes after baking — the cheese will set slightly but still be molten. Serve the dip in a warm bowl to keep it fluid. If the dip thickens as it cools, reheat gently with a splash of beer.
To make ahead, prepare the knots through the baking soda bath, then refrigerate on the baking sheet for up to 24 hours. Bake just before serving. The garlic butter can be made ahead and stored in the refrigerator; reheat gently before brushing.
Variations
- Spicy Jalapeño Cheddar: Add 1/4 cup finely chopped pickled jalapeños to the cheddar filling and stir 1/2 teaspoon cayenne into the dough. Serve with a chipotle beer cheese dip by blending in 1 chipotle pepper in adobo sauce.
- Everything Bagel Seasoning: Skip the pretzel salt and sprinkle the knots with everything bagel seasoning before baking. The garlic butter can be brushed on as usual, or use a garlic-herb butter for extra flavor.
- Bacon Ranch: Mix 1/4 cup cooked, crumbled bacon into the cheddar filling and add 1 teaspoon ranch seasoning to the dough. Serve with a ranch beer cheese dip by stirring in 2 tablespoons ranch dressing mix.
- Pepperoni Pizza: Replace the cheddar with shredded provolone and add 1/4 cup chopped pepperoni to the filling. Brush the baked knots with garlic butter and serve with a marinara dipping sauce instead of beer cheese.

Serving ideas
Serve the pretzel knots warm, straight from the oven, with the beer cheese dip on the side.
Arrange them on a platter with extra coarse salt and a few sprigs of fresh herbs if desired. The contrast of the warm, chewy bread and the creamy, tangy dip is irresistible.
These knots are perfect for sharing — place the dip in the center and let everyone pull apart their own knot.
Pair with a cold amber ale or a crisp lager to complement the beer cheese. For a heartier spread, serve alongside other pub-style appetizers like wings or sliders.

Triple Cheese Stuffed Garlic Pretzel Knots with Beer Cheese Dip

Ingredients
- 3 1/2 cups all-purpose flour, plus more for dusting
- 1 tbsp active dry yeast
- 1 tbsp granulated sugar
- 1 1/2 tsp salt
- 1 1/2 cups warm water (110°F/45°C)
- 8 oz mozzarella cheese, cut into 8 sticks
- 1 cup shredded cheddar cheese
- 1/2 cup baking soda
- 8 cups water
- 2 tbsp coarse pretzel salt
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 cup warm amber beer
- 2 cups shredded cheddar cheese
- 1 tbsp Dijon mustard
Instructions
- In a large bowl, dissolve the yeast and sugar in the warm water and let sit for 5 minutes until frothy. Add the flour and salt, then mix until a shaggy dough forms. Knead on a floured surface for 6-8 minutes, until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour, or until doubled in size.
- Punch down the dough and divide into 8 equal pieces. Roll each piece into an 8-inch rope. Flatten each rope slightly, place a mozzarella stick and a sprinkle of cheddar in the center, then pinch the edges tightly to seal. Roll gently to re-form a rope, then tie into a knot, tucking the ends underneath.
- Preheat the oven to 425°F (220°C). In a large pot, bring the water to a simmer. Carefully add the baking soda — it will bubble vigorously. Dip each pretzel knot into the bath for 30 seconds, turning once, then remove with a slotted spoon and place on a parchment-lined baking sheet.
- Sprinkle the knots generously with coarse pretzel salt. Bake for 14 minutes, until deep mahogany brown. While they bake, melt the butter and stir in the minced garlic. As soon as the knots come out of the oven, brush them all over with the garlic butter.
- In a small saucepan over low heat, warm the beer. Gradually whisk in the shredded cheddar cheese, a handful at a time, stirring until melted and smooth. Whisk in the Dijon mustard. Keep warm over the lowest heat, stirring occasionally, until ready to serve.
