Tips for success
For the best flavor, sear the roast in a hot skillet with a little oil before adding it to the slow cooker. This adds a deep, caramelized crust that enhances the overall taste.
While this step is not shown in the video, it is optional and can be done without changing the recipe's core ingredients.
If the gravy is too thin after shredding, transfer it to a saucepan and simmer over medium heat until it thickens to your liking.
You can also whisk in a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water. For a thicker gravy without extra steps, use a brown gravy mix that includes cornstarch.
Variations
- Spicy Kick: Add 1 teaspoon of crushed red pepper flakes or a diced jalapeño to the seasonings before cooking. The heat will infuse into the gravy and balance the richness of the butter.
- Mushroom Gravy: Add 8 ounces of sliced mushrooms to the slow cooker during the last 30 minutes of cooking. They will release moisture and add an earthy depth to the gravy.
- Herb Swap: Replace the cowboy butter with a compound butter made with fresh rosemary and thyme. This gives the roast a more traditional herb profile that pairs well with roasted potatoes.
- Veggie Boost: Add baby carrots and quartered potatoes to the slow cooker before cooking. They will cook in the gravy and become tender, making this a one-pot meal.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth to loosen the gravy.
- Freezer
- Freeze the shredded beef and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over low heat, stirring occasionally, or in the microwave in 30-second bursts.
Store leftover shredded beef and gravy in an airtight container in the refrigerator for up to 4 days.
Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy has thickened too much. The flavors will continue to meld, making leftovers even more delicious.
This recipe can be assembled the night before: place the roast in the slow cooker insert, sprinkle with seasonings, and top with butter. Cover and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the cold start.
Serving ideas
Serve the shredded beef over warm buttered egg noodles for a classic pairing. The noodles soak up the savory gravy, and the tender meat is the star. Add a side of steamed green beans or a crisp salad for a complete meal.
For a lower-carb option, serve the beef over cauliflower mash or alongside roasted vegetables. The gravy is also delicious spooned over mashed potatoes or polenta. Leftovers make excellent sandwiches on toasted rolls with a slice of provolone.

Three-Packet Garlic Butter Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 1 oz packet dry ranch seasoning
- 0.7 oz packet zesty Italian dressing mix
- 1 oz packet brown gravy mix
- 4 tbsp cowboy garlic butter, sliced
- Warm buttered egg noodles, for serving
Instructions
- Place the beef chuck roast in the center of the slow cooker insert. Sprinkle the dry ranch seasoning, Italian dressing mix, and brown gravy mix evenly over the entire surface of the roast.
- Place the slices of cowboy garlic butter on top of the seasoned roast, distributing them evenly so they melt over the meat as it cooks.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the beef is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for safety, but for fall-apart texture, cook until it exceeds 200°F (93°C). Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the roast rest in the liquid, uncovered, for at least 10 minutes. This allows the juices to redistribute and makes the meat easier to handle.
- Using two forks, shred the beef directly in the slow cooker, mixing it with the gravy. If the gravy seems thin, simmer it on the stovetop for a few minutes to thicken.
- Spoon the shredded beef and gravy over warm buttered egg noodles and serve immediately.
