Tips for success
For the most tender results, always cook this roast on LOW. High heat can make the meat tough and dry.
If you're short on time, you can cook on HIGH for 5-6 hours, but the texture won't be quite as melt-in-your-mouth. Use a 6-quart slow cooker so the roast fits comfortably without crowding.
The gravy is the star—don't be shy about spooning it over the meat and your sides. If you prefer a thicker gravy, remove the roast and whisk a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water) into the liquid, then simmer until thickened.
For a brighter finish, stir in a splash of red wine vinegar or a squeeze of lemon juice before serving.
Variations
- Spicy Kick: Add 1-2 teaspoons of crushed red pepper flakes or a chopped jalapeño with the seasoning packets. The heat will infuse the gravy and balance the richness of the butter.
- Veggie Addition: Scatter 2 cups of baby carrots and 3-4 halved red potatoes around the roast before cooking. They'll absorb the flavorful gravy and become tender alongside the beef.
- Herb Swap: If you don't have cowboy butter, use 4 tablespoons of butter mixed with 1 teaspoon dried thyme, 1 teaspoon dried rosemary, and 2 minced garlic cloves. It will give a similar herbaceous note.
- Beef Broth Boost: Pour 1/2 cup of beef broth over the roast before cooking to create even more gravy. This is great if you plan to serve a crowd or want extra sauce for noodles.
Storage and make-ahead
- Fridge
- Store leftover roast and gravy in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze the shredded beef and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop or in the microwave, adding a splash of broth or water to loosen the gravy. Avoid boiling, which can toughen the meat.

Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the gravy has thickened too much. The leftovers are delicious on sandwiches or over mashed potatoes.
This recipe is perfect for meal prep. You can assemble the roast with the seasoning packets and butter in the slow cooker insert, cover, and refrigerate overnight.
In the morning, place the insert in the base and start cooking. Or, cook the roast fully, shred it, and store it in the refrigerator for up to 4 days. Reheat gently before serving.
Serving ideas
Serve the shredded roast over warm buttered egg noodles, as shown in the video, or alongside mashed potatoes, rice, or crusty bread. The gravy is essential—spoon it generously over the meat and the starch. For a pop of color, sprinkle with chopped fresh parsley or chives before serving.
This roast also makes incredible sandwiches. Pile the beef onto toasted rolls, top with provolone or mozzarella, and broil until the cheese melts. Or, serve it over creamy polenta for a more elegant twist. The leftovers are just as good as the first night, so make extra if you can.

Three-Packet Garlic Butter Bottom Round Roast

Ingredients
- 3 1/2 lb beef bottom round roast
- 1 oz dry ranch seasoning mix
- 0.7 oz zesty Italian dressing mix
- 1 oz brown gravy mix
- 4 tbsp cowboy garlic butter, sliced into medallions
Instructions
- Place the beef bottom round roast in the center of a 6-quart slow cooker. Sprinkle the dry ranch seasoning, zesty Italian dressing mix, and brown gravy mix evenly over the entire surface of the roast, covering all sides.
- Place the cowboy garlic butter medallions on top of the seasoned roast, spacing them evenly.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or until the roast is fork-tender and easily shreds. Do not open the lid during cooking. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the roast rest in the liquid for at least 10 minutes. This allows the juices to redistribute and the meat to become even more tender.
- Using two forks, shred the roast directly in the slow cooker, mixing it with the gravy. Serve over warm buttered egg noodles or mashed potatoes, spooning extra gravy on top. Let it rest for 3 minutes before slicing.
