Tips for success

For the most flavorful gravy, use a high-quality beef bone broth. The extra collagen and minerals give the sauce a silky body that canned broth can't match. If you have time, you can even make your own bone broth ahead of time and freeze it in portions—just thaw and use as directed. The butter adds a final touch of richness, so don't skip it.

When shredding the beef, do it directly in the slow cooker so the meat can absorb the gravy as it rests. If you prefer a thicker gravy, you can whisk in a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water after shredding, then let it cook for 10 more minutes until thickened.

For a thinner gravy, add a splash of beef broth or water. Taste and adjust seasoning—the packets are salty, so you may not need extra salt.

Variations

  • Spicy Chipotle Twist: Add 2 chipotle peppers in adobo sauce, minced, along with the seasoning packets. The smoky heat complements the beef and adds a subtle kick. Serve with pickled onions and a dollop of sour cream.
  • Mushroom and Onion: Sauté 8 oz sliced mushrooms and 1 large onion, sliced, in butter until softened, then add to the slow cooker with the roast. The mushrooms add an earthy depth, and the onions melt into the gravy. Serve over mashed potatoes.
  • Herb and Garlic: Add 4 cloves of minced garlic and 2 sprigs of fresh rosemary to the slow cooker before cooking. The garlic infuses the gravy, and the rosemary adds a fragrant, woodsy note. Remove the rosemary sprigs before serving.
  • Balsamic Glaze: After shredding the beef, stir in 2 tablespoons of balsamic vinegar and 1 tablespoon of brown sugar. The vinegar brightens the gravy, and the sugar balances the acidity. Serve on toasted ciabatta rolls with arugula.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. The gravy will thicken as it cools; add a splash of broth or water when reheating.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating gently on the stovetop or microwave.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through. Or microwave in 1-minute intervals, stirring between, until hot.

Store leftover shredded beef and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the gravy has thickened too much. The beef also freezes well for up to 3 months.

This recipe is perfect for meal prep. You can assemble the roast and seasonings in the slow cooker insert the night before, cover, and refrigerate overnight. In the morning, simply place the insert in the slow cooker and start cooking.

The seasoning will have had time to penetrate the meat even more. Alternatively, cook the roast fully, shred it, and store in the refrigerator for up to 4 days—just reheat and serve.

Serving ideas

The classic way to serve this roast is piled high on toasted brioche slider buns, with a spoonful of extra gravy over the top. The sweet, buttery buns contrast beautifully with the savory, beefy filling.

Add a crisp pickle or a side of coleslaw for a touch of acidity and crunch. For a fork-and-knife dinner, serve the beef over creamy mashed potatoes, egg noodles, or rice, with a generous ladle of gravy.

This dish also shines as a filling for tacos, burritos, or stuffed baked potatoes. The leftovers are just as versatile—use them in quesadillas, on top of nachos, or stirred into mac and cheese.

The rich gravy makes it a natural pairing with roasted vegetables or a simple green salad dressed with vinaigrette to cut through the richness. However you serve it, this roast is sure to become a family favorite.

Frequently asked questions

Can this recipe be made in an Instant Pot or pressure cooker?
Yes, but the cooking time will be much shorter. Use the sauté function to brown the roast first, then add the seasonings, gravy, and butter. Cook on high pressure for 60 minutes, then let the pressure release naturally for 15 minutes before shredding. The texture will be tender, though not quite as fall-apart as slow cooking.
Why is the roast not falling apart after 8 hours on LOW?
Several factors can affect tenderness: the size of the roast, the exact temperature of your slow cooker, and whether you opened the lid during cooking. Make sure the roast is submerged in the liquid and cook on LOW for the full 8 to 10 hours. If it still resists shredding, return it to the slow cooker and cook for another 30 to 60 minutes.
Can this recipe be made gluten-free?
Yes, but you'll need to check the labels of the seasoning packets and gravy. Many store-bought mixes contain wheat flour or soy sauce with gluten. Look for gluten-free versions of ranch, Italian dressing, and brown gravy mixes. The rest of the ingredients are naturally gluten-free, but always verify the broth as well.
What can be used instead of brioche buns?
Any soft, sturdy roll works well—try pretzel buns, ciabatta, or even hamburger buns. For a lower-carb option, serve the beef over cauliflower mash or alongside roasted vegetables. The beef is also delicious on its own with a side of crusty bread for soaking up the gravy.
How can the gravy be thickened if it is too thin?
After shredding the beef, whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water to make a slurry. Stir it into the slow cooker and cook on HIGH for 10 to 15 minutes, until the gravy thickens. Alternatively, mash some of the cooked beef into the gravy to naturally thicken it.

Three-Packet Brown Gravy Chuck Roast: Easy Crockpot Dinner

Prep 10 minCook 8 hTotal 8 h 10 minServes 8
Shredded beef chuck roast in a glossy brown gravy inside a black slow cooker insert, steam rising.

Ingredients

  • 3 1/2 lb beef chuck roast
  • 1 oz dry ranch seasoning mix
  • 0.7 oz zesty Italian dressing mix
  • 1 oz brown gravy mix
  • 2 cups savory brown bone-broth gravy
  • 4 tbsp unsalted butter, cut into pats
  • 8 toasted brioche slider buns, for serving

Instructions

  1. Place the beef chuck roast in the center of the slow cooker insert. Sprinkle the dry ranch seasoning, zesty Italian dressing mix, and brown gravy mix evenly over the top of the roast, covering as much surface as possible.
  2. Pour the savory brown bone-broth gravy over the seasoned roast. Dot the top of the roast with the unsalted butter pats.
  3. Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the meat is fork-tender and shreds easily. The internal temperature of the roast should reach at least 145°F (63°C) for food safety, but for fall-apart tenderness, cook until it easily pulls apart. Let it rest for 3 minutes before slicing.
  4. Using two forks, shred the roast directly in the slow cooker. Stir the shredded beef into the gravy so every piece is coated. Let the beef rest in the hot gravy for 5 minutes before serving.
  5. Spoon the shredded beef and gravy onto the toasted brioche slider buns. Serve immediately, with extra gravy on the side if desired.
