Tips for success
For the ultimate gooey center, bake the cookies just until the edges are set and the centers look slightly underdone. The residual heat from the baking sheet will finish the job. If you prefer a more well-done cookie, add 1-2 minutes to the baking time, but be careful not to overbake—the centers should still be soft.
Always use a light-colored baking sheet; dark sheets absorb more heat and can cause the bottoms to brown too quickly. If you only have dark sheets, reduce the oven temperature by 25°F.
When scooping the dough, use a trigger-release cookie scoop for clean, even balls. If you don't have a scale, a 4-ounce scoop is about 1/2 cup of dough. Chill the dough balls on a plate or baking sheet in the freezer, then transfer them to a zip-top bag for longer storage. This way, you can bake a single cookie whenever the craving hits. Just add a minute or two to the baking time for frozen dough straight from the bag.
Variations
- Double Chocolate: Replace 1/4 cup of the all-purpose flour with 1/4 cup unsweetened cocoa powder. Add an extra 1/2 cup of semi-sweet chocolate chunks for a richer, fudgier cookie.
- Nut Lover's: Fold in 1 cup of toasted walnuts or pecans along with the chocolate chunks. Toast the nuts in a dry skillet over medium heat for 5 minutes to bring out their flavor.
- Sea Salt Finish: Sprinkle flaky sea salt over the tops of the cookies immediately after they come out of the oven. The salt enhances the sweetness and adds a pleasant crunch.
- Peanut Butter Swirl: Drop spoonfuls of creamy peanut butter onto the dough balls before freezing, then gently swirl with a knife. Use 1/2 cup peanut butter divided among the 8 cookies.
Storage and make-ahead
- Fridge
- Store baked cookies in an airtight container at room temperature for up to 3 days. Reheat in a 300°F oven for 5-7 minutes.
- Freezer
- Freeze unbaked dough balls on a baking sheet, then transfer to a freezer bag for up to 3 months.
- Reheat
- Reheat baked cookies in a 300°F oven for 5-7 minutes, or microwave for 15-20 seconds, to restore gooeyness.
Store baked cookies in an airtight container at room temperature for up to 3 days. To keep them soft, add a slice of bread to the container—it absorbs excess moisture and helps maintain the gooey texture. For longer storage, freeze the baked cookies in a single layer on a baking sheet, then transfer to a freezer-safe bag for up to 3 months. Reheat frozen cookies in a 300°F oven for 5-7 minutes, or in the microwave for 15-20 seconds, to bring back the fresh-baked warmth.
The dough balls can be prepared up to 3 months in advance and frozen. After scooping, place the dough balls on a parchment-lined baking sheet and freeze until solid. Transfer to a zip-top bag or airtight container, separating layers with parchment paper.
When ready to bake, place the frozen dough balls on a parchment-lined baking sheet and bake directly from the freezer, adding 1-2 minutes to the baking time. You can also refrigerate the dough balls for up to 3 days before baking.
Serving ideas
These cookies are best served warm, within 30 minutes of baking, when the chocolate is still molten and the centers are gooey. Pair them with a glass of cold milk, a scoop of vanilla ice cream, or a drizzle of caramel sauce for extra indulgence.
The contrast between the crisp edges and the soft, almost underdone center is what makes them so irresistible. For a more elegant presentation, dust them with flaky sea salt just before serving—the salt enhances the sweetness and adds a pleasant crunch.
If you're serving a crowd, bake the cookies in batches and keep them warm in a low oven (200°F) for up to 30 minutes. Alternatively, bake them ahead and reheat just before serving. These cookies also make a great gift—wrap them in a box or tin with parchment paper and they'll be a hit.
Remember to handle them gently, as the centers are soft and can break apart if you're too rough. Enjoy them while they're warm, and don't forget to pull one apart to show off that gooey center.

Thick Bakery-Style Chocolate Chip Cookies: Gooey Four-Ounce Giants

Ingredients
- 1 cup cold unsalted butter, cubed
- 1 cup dark brown sugar, packed
- 3 tbsp white sugar
- 1 cold large egg
- 1 cold egg yolk
- 2 tsp vanilla bean paste
- 2 1/4 cups all-purpose flour
- 1 tbsp cornstarch
- 1 tsp espresso powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp kosher salt
- 1 1/2 cups semi-sweet chocolate chunks
- 1 cup milk chocolate chunks
Instructions
- In the bowl of a stand mixer fitted with the paddle attachment, combine the cold cubed butter, dark brown sugar, and white sugar. Beat on medium speed until light and fluffy, about 2 minutes. Add the cold egg, cold egg yolk, and vanilla bean paste. Continue beating until fully incorporated and smooth, scraping down the sides as needed.
- In a separate large bowl, whisk together the all-purpose flour, cornstarch, espresso powder, baking powder, baking soda, and kosher salt until evenly combined. The espresso powder enhances the chocolate flavor without adding a coffee taste.
- With the mixer on low speed, gradually add the dry ingredients to the wet mixture. Mix until just a few streaks of flour remain. Use a rubber spatula to fold in the semi-sweet and milk chocolate chunks until evenly distributed. Do not overmix.
- Use a 4-ounce cookie scoop or a kitchen scale to portion the dough into 8 equal balls. Each ball should weigh about 4 ounces. Place them on a parchment-lined baking sheet, spacing them at least 2 inches apart.
- Place the baking sheet with the dough balls in the freezer. Freeze for at least 2 hours, or until the dough is completely firm. This step prevents spreading and ensures the centers stay gooey while the edges set.
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Place the frozen dough balls on the prepared sheet, spacing them at least 3 inches apart. Bake for 17 minutes, until the edges are set and lightly golden, while the centers still look slightly soft and underdone.
- Remove the baking sheet from the oven and let the cookies cool on the hot pan for 5 minutes. The residual heat continues to set the structure while keeping the center gooey. Transfer to a wire rack and serve warm, pulling one apart to reveal the molten chocolate.
