Tips for success
For a deeper flavor profile, you can marinate the beef in the sauce for up to two hours in the refrigerator before placing it into the slow cooker. This extra step allows the flavors to penetrate even deeper into the meat fibers.
However, keep the pear separate until just before cooking to ensure the enzymes do not break down the meat too much, which could change the texture.
When assembling the lettuce wraps, choose sturdy leaves like Romaine or butter lettuce. These provide a better structure for the warm, saucy beef.
Keep your kimchi and ssamjang chilled until the very last second, as the temperature contrast between the hot, savory beef and the cold, spicy condiments is what makes this dish truly special. Sprinkle the sesame seeds generously for an added nutty crunch.
Variations
- Spicy Bulgogi: Add two tablespoons of gochujang (Korean chili paste) to the marinade for a fiery kick. This adds complexity and heat that pairs exceptionally well with the sweetness of the Asian pear.
- Vegetable-Forward: Include sliced carrots, shiitake mushrooms, or scallions in the slow cooker with the beef. These vegetables will absorb the savory marinade and add extra texture to the final wraps.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Store in a freezer-safe bag or container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a pan over low heat or in the microwave until the beef is heated through to 165°F (74°C). Add a splash of water if the sauce becomes too thick.
Store any leftover beef in an airtight container. It is best to keep the meat and the sauce together, as this prevents the beef from drying out during storage.
Consume the leftovers within three days for the best quality and flavor. Always ensure the beef has cooled to room temperature, but no longer than two hours, before placing it in the refrigerator.
This dish is an excellent candidate for meal prep. You can prepare the marinade and store it in the refrigerator for up to 24 hours before cooking.
The beef can also be layered in the slow cooker insert and kept in the fridge for a few hours before turning it on. This makes it a stress-free option for busy weeknights when you want a meal ready shortly after arriving home.
Serving ideas
Serve this Bulgogi family-style by placing the bowl of warm, tender beef in the center of the table. Provide a platter of washed lettuce leaves and small bowls of kimchi, ssamjang, and toasted sesame seeds. This allows each person to build their own wraps according to their personal preferences, making for an interactive and enjoyable dining experience.
Consider serving a side of steamed white rice or a simple cucumber salad to round out the meal. The mildness of the rice complements the savory intensity of the beef, while the crisp cucumbers mirror the texture of the lettuce wraps. This combination highlights the distinct flavors of the Bulgogi without overwhelming the palate.

Tender Slow-Cooker Korean Bulgogi Beef Wraps

Ingredients
- 2 lb thinly sliced ribeye beef
- 1 Asian pear, grated
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp mirin
- 1 tbsp toasted sesame oil
- 3 cloves minced garlic
- 1 yellow onion, sliced
- lettuce leaves, for serving
- kimchi, for serving
- ssamjang paste, for serving
- toasted sesame seeds, for serving
Instructions
- In a small bowl, whisk together the soy sauce, brown sugar, mirin, toasted sesame oil, and minced garlic until the sugar is fully dissolved. This creates the foundational sweet and savory glaze for the beef.
- Place the thinly sliced ribeye beef into the slow cooker insert. Add the grated Asian pear and the sliced yellow onion on top of the beef. Pour the prepared marinade evenly over the ingredients.
- Cover the slow cooker and set it to the low setting. Allow the beef to cook for three and a half hours. During this time, the enzymes in the Asian pear will break down the fibers in the ribeye, resulting in incredibly tender meat. Ensure the beef reaches an internal temperature of 145°F (63°C) and let the meat rest for at least 3 minutes before serving.
- Once the beef is tender and the sauce has reduced slightly, serve the warm Bulgogi by spooning it into crisp lettuce leaves. Top each wrap with a small amount of kimchi, a dab of ssamjang paste, and a sprinkle of toasted sesame seeds.
