Tips for success
For the most tender beef, always cook on low rather than high—low heat allows the collagen to break down gradually without toughening the meat.
If time is short, you can cook on high for 4-5 hours, but the texture will be slightly less fall-apart. Let the beef rest for about 10 minutes after shredding, so it can absorb some of the gravy.
To make the gravy extra silky, strain it before adding the cream if you prefer a smooth sauce. You can also add a splash of cream at the very end for a richer finish.
If the gravy is too thick, thin it with a little beef broth. If too thin, whisk in a bit more cornstarch slurry and cook until it thickens.
Variations
- Mushroom Gravy: Add 8 oz sliced mushrooms to the skillet with the onions and cook until browned. The mushrooms add an earthy depth that pairs beautifully with the beef.
- Red Wine Gravy: Replace 1/2 cup of the beef broth with dry red wine. Add it to the skillet after the onions and let it reduce by half before adding the broth.
- Herb-Infused: Add a sprig of rosemary and a bay leaf to the slow cooker along with the thyme. Remove them before shredding the beef.
- Spicy Kick: Add 1/2 teaspoon of smoked paprika or a pinch of cayenne pepper to the seasoning mix for a subtle warmth.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through.
Store leftover beef and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will meld even more as it sits. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if needed to loosen the gravy.
This dish can be fully cooked up to 2 days ahead. Let it cool completely, then refrigerate. Reheat gently on the stovetop or in the slow cooker on low. The beef can also be shredded and stored in the gravy, making it easy to reheat individual portions.
Serving ideas
Serve the creamy gravy beef over mashed potatoes, egg noodles, or creamy polenta to soak up the rich sauce. A side of roasted green beans or a crisp green salad adds freshness.
The dish is hearty enough to be a complete meal on its own, but it also pairs well with crusty bread for dipping.
For a low-carb option, serve over cauliflower mash or steamed vegetables. The gravy is also delicious spooned over rice or grits.
Garnish with extra fresh thyme or chopped parsley for a pop of color, if desired. This is a family-friendly meal that satisfies even the biggest appetites.

Slow-Cooker Creamy Gravy Beef

Ingredients
- 3 lb beef chuck roast, trimmed
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 cup heavy cream
- 2 tbsp cornstarch
- 1 tbsp fresh thyme leaves
Instructions
- Pat the beef chuck roast dry with paper towels. Season all over with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Sear the roast for 3-4 minutes per side, until deeply browned. Transfer to the slow cooker.
- In the same skillet, add the chopped onion and cook over medium heat until softened, about 5 minutes. Add the garlic and cook for 1 minute more, until fragrant. Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the skillet.
- Pour the onion-broth mixture over the beef in the slow cooker. Sprinkle with fresh thyme. Cover and cook on low for 7-8 hours, until the beef is fork-tender. Let it rest for 3 minutes before slicing.
- Once the beef is tender, carefully transfer it to a cutting board and tent loosely with foil. In a small bowl, whisk the cornstarch with 2 tablespoons of water to make a slurry. Whisk the slurry into the hot liquid in the slow cooker. Add the heavy cream and stir to combine. Cover and cook on high for 15-20 minutes, until the gravy thickens.
- Shred the beef with two forks, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir into the gravy. Let it sit for a few minutes to absorb the sauce. Serve hot over mashed potatoes, rice, or noodles.
