Tips for success
For the most flavorful sauce, use a good-quality yellow mustard and raw honey. The vinegar should be apple cider vinegar—not white vinegar—for the right fruity tang.
If the sauce tastes too sharp after cooking, stir in a little more honey or brown sugar. If it is too sweet, add a splash of vinegar. The sauce can also be made ahead and refrigerated for up to a week; just warm it before using.
Shred the chicken while it is still warm for the best texture. If you prefer chunkier shreds, use a pair of tongs and a fork instead of two forks. To keep the chicken moist, return it to the sauce immediately after shredding.
For extra flavor, let the shredded chicken sit in the sauce for 15 minutes before serving. The leftovers are excellent in tacos, on nachos, or stirred into mac and cheese.
Variations
- Spicy Carolina Mustard: Add 1 to 2 tablespoons of hot sauce or a teaspoon of cayenne pepper to the sauce for a spicy kick. Adjust the honey and brown sugar to balance the heat.
- Smoky Version: Stir in 1 teaspoon of liquid smoke or smoked paprika to mimic a smoker's flavor. This adds a deep, woodsy note that pairs well with the mustard sauce.
- Honey-Mustard Glaze: Increase the honey to 3/4 cup and reduce the vinegar to 1/4 cup for a sweeter, more glaze-like sauce. This version is especially good with chicken thighs.
- Slow Cooker BBQ Tacos: Serve the pulled chicken in warm corn or flour tortillas with slaw, pickled red onions, and a drizzle of the extra sauce. Add avocado or jalapeños for extra flavor.

Tangy Crockpot Carolina Mustard BBQ Pulled Chicken

Ingredients
- 3 lb boneless, skinless chicken breasts and thighs
- 1 cup yellow mustard
- 1/2 cup honey
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar, packed
- 2 tbsp Worcestershire sauce
- 8 toasted potato rolls
- Crunchy dill pickles, for serving
- Southern slaw, for serving
Instructions
- Place the chicken breasts and thighs in the bottom of a 6-quart slow cooker. In a medium bowl, whisk together the yellow mustard, honey, apple cider vinegar, brown sugar, and Worcestershire sauce until the sugar dissolves. Pour the sauce over the chicken, turning the pieces to coat them evenly.
- Secure the glass lid on the slow cooker. Cook on LOW for 4 hours, without opening the lid during the first 3 hours. The sauce will bubble gently around the edges and the chicken will become very tender.
- Transfer the chicken to a cutting board. Using two forks, shred the meat into bite-size pieces, discarding any large pieces of fat. Return the shredded chicken to the slow cooker and stir to coat it in the sauce.
- Cover the slow cooker again and let the shredded chicken simmer in the sauce on LOW for 15 to 20 minutes. This allows the meat to soak up the tangy Carolina gold glaze and become even more flavorful.
- While the chicken simmers, toast the potato rolls in a toaster or under the broiler until golden brown and lightly crisp on the cut sides. Keep them warm in a low oven until ready to serve.
- Spoon a generous amount of the pulled chicken onto the bottom half of each toasted roll. Top with crunchy dill pickles and a scoop of southern slaw. Place the top half of the roll over the filling and serve immediately.
