Tips for success

For the best flavor, choose a high-quality molasses garlic BBQ sauce — the kind that pours thick and has a deep, dark color. If you want a spicier kick, add a pinch of cayenne or a dash of hot sauce to the sauce before pouring.

The brown sugar is key to the caramelization, so don't reduce it. If you prefer a less sweet glaze, use a smoky BBQ sauce and reduce the brown sugar to 1/3 cup.

To get the most tender ribs, cook them on low for the full 8 hours. High heat can work in a pinch, but low and slow gives the collagen more time to break down, resulting in a more succulent texture.

When serving, use a carving fork to lift the ribs gently — they're so tender they might fall apart. Spoon extra sauce and onions over each portion.

Variations

  • Spicy Molasses Ribs: Add 1-2 minced chipotle peppers in adobo sauce to the BBQ sauce before pouring. The smoky heat balances the sweetness and adds a subtle kick.
  • Apple Cider Ribs: Replace 1/2 cup of the BBQ sauce with apple cider vinegar and add 1 sliced apple to the onion layer. The tangy fruit brightens the rich pork.
  • Cola-Glazed Ribs: Substitute 1/2 cup of the BBQ sauce with cola and reduce the brown sugar to 1/4 cup. The cola adds caramel notes and helps tenderize the meat.
  • Smoky Bourbon Ribs: Stir 2 tablespoons bourbon into the BBQ sauce. The bourbon adds a warm, smoky depth that complements the molasses and garlic.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Freezer
Freeze the cooled ribs and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a covered pot over low heat, stirring occasionally, until heated through. Add a splash of water or broth if the sauce is too thick.

Store leftover ribs and sauce in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of water or broth if needed to loosen.

The ribs can be assembled in the slow cooker insert the night before — layer the ribs, onions, sugar, and sauce, then cover and refrigerate.

In the morning, place the insert in the slow cooker and cook on low as directed. Add 30 minutes to the cooking time to account for the cold start.

Serving ideas

Serve the ribs hot, with a generous spoonful of the caramelized onions and sauce over the top.

The sweet, tangy glaze pairs beautifully with creamy coleslaw, cornbread, or a simple green salad. For a heartier meal, serve over mashed potatoes or polenta to soak up the extra sauce.

These ribs are messy in the best way — provide plenty of napkins and maybe a wet towel for fingers. The meat is so tender it practically falls off the bone, so a fork is all you need. For a casual gathering, set out the slow cooker and let guests help themselves.

Frequently asked questions

Can this recipe be made with baby back ribs instead of St. Louis spare ribs?
Yes, baby back ribs work well, but they cook faster. Reduce the cooking time to 6 to 7 hours on low, or 3 to 4 hours on high. Check for tenderness at the 6-hour mark to avoid overcooking.
Why does the sauce turn watery during cooking?
The ribs release moisture as they cook, which can thin the sauce. To fix this, remove the ribs when done and simmer the sauce on the stovetop over medium heat for 10 to 15 minutes, until thickened. Then spoon it back over the ribs.
Can these ribs be cooked on high instead of low?
Yes, cooking on high for 4 to 5 hours works, but the meat may be slightly less tender than low-and-slow cooking. The sauce may also reduce more quickly, so check the liquid level and add a splash of water if needed.
How should the ribs be stored and reheated?
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop over low heat, adding a splash of water or broth to loosen the sauce. The ribs also freeze well for up to 3 months.
What side dishes go well with these ribs?
The sweet, tangy glaze pairs well with creamy coleslaw, cornbread, mac and cheese, or a simple green salad. For a heartier meal, serve over mashed potatoes or polenta to soak up the extra sauce.

Sweet Vidalia Molasses Spare Ribs: Slow-Cooker Pull-Apart

Prep 15 minCook 8 hTotal 8 h 15 minServes 6
Pull-apart spare ribs glazed with molasses garlic sauce and topped with caramelized Vidalia onions in a slow cooker.

Ingredients

  • 2 racks St. Louis style pork spare ribs
  • 2 large Vidalia onions, thinly sliced
  • 1/2 cup golden brown sugar, packed
  • 1 1/2 cups molasses garlic BBQ sauce

Instructions

  1. Place the two racks of St. Louis style pork spare ribs into the slow cooker, meaty side up, overlapping slightly if needed to fit in a single layer.
  2. Scatter the sliced Vidalia onions evenly over the ribs, then sprinkle the brown sugar over the onions, covering as much surface as possible.
  3. Pour the molasses garlic BBQ sauce over the onions and ribs, using a spatula to spread it into an even coating. Make sure the sauce reaches the edges of the slow cooker.
  4. Cover the slow cooker and cook on low for 8 hours, or on high for 4 to 5 hours, until the meat is tender and pulls apart easily with a fork. Let it rest for 3 minutes before slicing.
  5. Turn off the slow cooker. Use a carving fork to lift the ribs out of the sauce, letting excess drip back. Transfer to a serving plate, spoon some of the caramelized onions and sauce over the top, and let rest for at least 3 minutes before serving.
