Tips for success
For the best flavor, choose a BBQ sauce that lists molasses as one of the first ingredients. If you cannot find a molasses garlic sauce, combine your favorite BBQ sauce with 1 tablespoon of molasses and 1 teaspoon of garlic powder.
The brown sugar adds sweetness and helps create a sticky glaze; do not skip it. If you prefer a less sweet dish, reduce the brown sugar to 1/4 cup.
To make the ribs even more flavorful, sear them in a hot skillet for 2 minutes per side before adding to the slow cooker. This adds a deeper, caramelized crust. However, it is not necessary — the slow cooker does the work. If you are short on time, skip the searing. The ribs will still be delicious.
Variations
- Spicy Kick: Add 1 teaspoon of cayenne pepper or a minced chipotle pepper in adobo sauce to the BBQ sauce before pouring. The heat balances the sweetness of the onions and sugar.
- Smoky Bourbon: Replace 1/4 cup of the BBQ sauce with bourbon and add 1 teaspoon of liquid smoke. The bourbon adds depth, and the liquid smoke enhances the smoky flavor.
- Honey Garlic: Swap the brown sugar for honey and use a garlic-infused BBQ sauce. Reduce the honey to 1/3 cup to keep the sweetness balanced.
- Root Beer Glaze: Substitute 1 cup of root beer for 1 cup of the BBQ sauce and reduce the brown sugar to 1/4 cup. The root beer adds a caramel-like sweetness and tenderizes the meat.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of water to loosen the sauce.
- Freezer
- Freeze cooked ribs in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop or in the microwave, adding a splash of water or broth to keep the sauce moist. Avoid boiling to prevent the meat from drying out.
Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools. Reheat gently in the microwave or on the stovetop with a splash of water or broth to loosen the sauce. The ribs also freeze well; see freezing instructions below.
This recipe is naturally make-ahead friendly. The ribs can be cooked up to 2 days in advance and stored in the refrigerator. Reheat gently in the slow cooker on low or in a covered pot on the stovetop.
The flavors will continue to develop, making the leftovers even more delicious. You can also assemble the raw ribs, onions, sugar, and sauce in the slow cooker insert and refrigerate overnight, then start cooking the next day.
Serving ideas
Serve the ribs as the main course with classic Southern sides like creamy mashed potatoes, tangy coleslaw, or buttery cornbread. The sweet and smoky glaze pairs well with the richness of the pork.
Spoon the caramelized onions and extra sauce over the top of each serving. A sprinkle of fresh parsley or sliced green onions adds a pop of color, though it is optional.
For a casual meal, pile the ribs onto soft rolls with pickles and extra sauce for a pulled-pork-style sandwich. You can also serve them over rice or noodles to soak up the sauce.
The leftovers are excellent chopped and added to baked beans, tacos, or quesadillas. This recipe is versatile and sure to become a family favorite.

Sweet Vidalia Molasses Country Pork Ribs

Ingredients
- 3 lb boneless country-style pork ribs
- 2 large Vidalia onions, thinly sliced
- 1/2 cup packed brown sugar
- 1 1/2 cups molasses garlic BBQ sauce
Instructions
- Place the boneless country-style pork ribs in the bottom of a 6-quart slow cooker, arranging them in a single layer as much as possible. Scatter the sliced Vidalia onions over the top of the ribs, spreading them evenly. Sprinkle the brown sugar over the onions, covering them completely.
- Pour the molasses garlic BBQ sauce over the onions and brown sugar, using a spatula to spread it evenly. Make sure the sauce covers the surface, but do not stir — the layers will meld during cooking.
- Cover the slow cooker and cook on low for 6 to 8 hours, until the pork is fork-tender and easily pulls apart. The onions will become jammy and caramelized, and the sauce will reduce into a thick glaze. Do not lift the lid during the first 4 hours of cooking. Let it rest for 3 minutes before slicing.
- Use an instant-read thermometer to check the thickest part of a rib. The meat should register at least 145°F (63°C). Since the ribs are cooked low and slow, they will likely be well above this, but always verify. Let the meat rest for at least 3 minutes before serving.
- Using tongs or a fork, lift the ribs out of the slow cooker and place them on a serving plate. Spoon the caramelized onions and extra glaze over the top. Serve hot, with additional sauce from the slow cooker if desired.
