Tips for success
For the most flavorful results, choose a high-quality maple bourbon BBQ sauce with a good balance of sweetness and smoke.
If you prefer a bolder bourbon flavor, add an extra tablespoon of bourbon to the sauce before pouring it over the ribs. Keep in mind that alcohol does not fully cook off in a slow cooker, so this is optional and for adults only.
To make the sauce even thicker, remove the ribs after cooking and transfer the sauce to a saucepan. Simmer over medium heat for 10 to 15 minutes until it reduces and thickens.
You can also whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) and simmer for 2 minutes. This is especially helpful if your BBQ sauce was on the thin side.
Variations
- Spicy Kick: Add 1 to 2 minced chipotle peppers in adobo sauce to the BBQ sauce before pouring. This adds a smoky heat that balances the sweetness. For extra heat, sprinkle in 1/2 teaspoon cayenne pepper.
- Herb Infusion: Scatter 2 sprigs of fresh rosemary and 3 sprigs of thyme over the onions before adding the sauce. The herbs infuse the sauce with an earthy aroma. Remove the stems before serving.
- Bourbon-Forward: Stir 2 tablespoons of bourbon into the BBQ sauce before pouring. Cook as directed. The bourbon adds a warm, oaky note. Note that alcohol does not fully cook off in a slow cooker.
- Smoky Twist: Replace the maple bourbon BBQ sauce with a smoky chipotle BBQ sauce, and add 1 teaspoon of smoked paprika to the brown sugar. This gives a deeper, smokier flavor profile.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze cooked short ribs in a freezer-safe container with sauce for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over low heat, or in a 300°F (150°C) oven for 20-30 minutes, until hot and bubbling. Add a little water or broth if the sauce is too thick.
Store leftover short ribs in an airtight container with some of the sauce. Refrigerate for up to 4 days. The flavors will continue to meld, and the ribs may taste even better the next day.
Reheat gently in a saucepan over low heat, or in the microwave in 30-second bursts, until warmed through. Add a splash of water or broth if the sauce has thickened too much.
This dish is ideal for making ahead. Prepare the ribs as directed, then cool completely and refrigerate in the slow cooker insert or a large container. The next day, skim off any solidified fat from the surface.
Reheat the ribs gently in the slow cooker on LOW for 2 to 3 hours, or in a covered Dutch oven in a 300°F (150°C) oven for 30 to 40 minutes. The ribs will remain tender and flavorful.
Serving ideas
Serve the short ribs over creamy mashed potatoes, soft polenta, or buttered egg noodles to soak up the rich sauce. The sweet, smoky glaze pairs beautifully with tangy coleslaw or a crisp green salad with a simple vinaigrette. For a heartier meal, add roasted vegetables like carrots or parsnips, which benefit from the same sweet-savory flavors.
For a casual dinner, pile the ribs onto soft rolls with a spoonful of caramelized onions and a drizzle of sauce to make sliders. Or serve them as a main course with crusty bread for dipping into the sauce. Garnish with chopped fresh parsley or chives for a pop of color, if desired—though the dish is perfectly delicious on its own.

Sweet Vidalia Maple Bourbon Beef Short Ribs: Easy Crockpot Dinner

Ingredients
- 4 lb bone-in English-cut beef short ribs
- 2 large Vidalia onions, thinly sliced
- 1/4 cup brown sugar
- 1 1/2 cups maple bourbon BBQ sauce
Instructions
- Place the beef short ribs in the bottom of a 6-quart slow cooker in a single layer, overlapping slightly if needed. Scatter the sliced Vidalia onions evenly over the top of the ribs. Sprinkle the brown sugar over the onions, covering them as evenly as possible.
- Pour the maple bourbon BBQ sauce evenly over the onions and brown sugar. Use a spoon to spread the sauce so it covers most of the surface, but do not stir—the layers will meld as they cook.
- Cover the slow cooker with the lid and set it to LOW. Cook for 8 to 10 hours, until the meat is fork-tender and easily pulls away from the bone. Avoid opening the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- After 8 hours, test the ribs with a fork. The meat should be very tender and nearly falling off the bone. If not, continue cooking for another 1 to 2 hours. When the meat easily shreds, it is done. Let the ribs rest in the sauce for 10 minutes before serving.
- Turn off the slow cooker and let the ribs rest in the hot sauce for at least 10 minutes. This allows the juices to redistribute and makes the meat even more succulent. Do not skip this step.
- Using tongs or a carving fork, carefully lift each short rib from the slow cooker, letting excess sauce drip back into the pot. Place the ribs on a serving platter or individual plates. Spoon some of the caramelized onions and sauce over the top.
